In kerala - we add some tamarind in it and it is called pulleem mulak udachath then we eat with boiled tapioca... Kappem mulak udachathum😎 and we use shallots instead of onion... It taste superb
Not the same. Tarmaind will change the taste completely. I tried your version it’s tasty too. I m from Bangladesh, It's authentic Bangladeshi Bengali dish. But during pregnancy, I can't tolerate smell of onion and garlic. So I tried kerala version it’s tasty and make " onion & garlic" tolerable.

You can also make this with bitter gaurd and plaintain ..it will be so yummy...my mom used make this...we also put some groundnuts into it..all must be added at the time of frying

But in grand feast for many people or for veg people, we make it this way. Good to know that almost all part of India enjoys some form of this dish.

Comfort food can't be like you're sipping on water with every bite! And wdym Indian, alot of Indians don't tolerate so much of spice! I do but it doesn't seem like a staple comfort food in any face because garlic or onion is not going to cancel the spice really well already! Red chillies are usually more spicy ! Ek katori chawal me 4 mirchi agar tumhe normal lagti hai aur even comfort food ki tarah khate ho toh apko surely ek gastroenterology se milna chahiye.
