Love the way you do your videos, my only feedback is too maybe explain some of the lesser known ingredients being used in the cocktails. I’m new to bar tending and I keep exiting to google to figure out what your using so I can understand the flavour profile of the cocktail. Quality content though my friend.
I appreciate the extra brightness and colour on the set, even though I miss the espresso machine sitting in the back.

Yeah........ The Esmeralda is on my menu tonight. I make that same strawberry daiquiri with fresh sage. Love the content, my friday routine is now wake up, get coffee, and wait for the video to upload.

@@TrufflesOnTheRocks Made it twice, very inspiring, I even made a riff off of it using grappa, and an Islay Scotch, and swapping orgeat with amaretto (1/4 oz), simple syrup (1/2 oz ), also used lemon, suze, egg white, and spritzed of orange flower water. It was nice, I really like whisk(e)y and lemon, but how that lime really cuts through and the evolution is so wonderful on the esmeralda. Thank you for the inspiring video. Can't wait till the morning.

Thanks my friend! You know, a few years ago I put that exact same drink on a bar menu but with gin instead of rum and called it the T.I.N.A. Daiquiri. T.I.N.A. Stood for « this is not a ». We sold it like crazy and no one was paying attention to the ingredient list. I thought it was hilarious!

Love it! Do you ever have issues straining from a cobbler shaker with muddled fruit and/or herbs? I found that mine got supeeeeer slow whenever I muddled stuff in it. I also can’t believe you guys get Suze in Quebec! They stopped bringing it in a few years ago here and I hear other places in Canada are the same!

It's true that cobbler shakers is not the most efficient shaker for some situations. At work I always use a tin on tin but at home, I use a cobbler. Especially the glass one because it looks good for the videos. Where you live? I'm curious about that Suze problem.
Truffles On The Rocks I live in Alberta! I’ve searched online and talked to other Canadian’s. It’s not in BC, Alberta or LCBO. (Although it used to be in B.C. and Alberta and LCBO seems to have a different gentian liqueur.) The only site that comes up when searching “Suze Canada” is SAQ! Interesting, huh?

Jean-Felix, I was just going back to your TOTR Southside which uses Fernet, and I noticed that the video lists the lemon juice amount at 3/4oz while the text in the description lists the lemon juice at 1oz. Can you please identify which amount is the correct balanced amount? Thanks!
Hey Michael, sorry for the confusion. 3/4 it’s what I used but tbh, with a full ounce of lemon it can also be very nice. It’s a question of taste at that stage. I’d say, do as I did with 3/4 oz and give it a quick taste before shaking it. If it’s too sweet for you, just add the extra 1/4 ounce. Cheers

I made some nice cocktail with fresh cactus fruit (idk how its called in english...in german its literaly cactis fig), tequila, lime juice, sugar cane water and a bit of agave sirup
When these fruits are fresh and in season, they are delicious. Unfortunately I’m Quebec, they don’t taste much

An easy pick is Appleton but I love the Jamaican Rum from Plantation and of course, Wray & Nephew is a must for Tiki cocktails

You can use pretty much any espadin mezcal for that recipe. Though, the brand I’m using for this particular recipe is Bozal and it’s a Tobasiche agave

I offend wondered why you always uses a cobbler shaker. Most bartenders I know uses Boston, unless they are from the East (Asian/Japanese), they seem to love cobbles. I think they easily are the prettiest of the two with so many shapes and colors, but for me Boston has always been the most easy and practical with more volume to use (using one with metal bottom and glass top so i can see what i put in). What is your reason for using cobbler? just curious as I am in the opinion there is no right one, the right one is always the one that works for you.

For real mate, the reason I use the cobbler is mainly because it looks good for the videos. And is uses a little less ice which is good for home bartending. But at work, I always use a tin on tin.

Love your content. Ardent watcher. However I think you include the name of the cocktail on the screen. In the shot where you show the finished cocktail before you actually start making it. Just like you write the names of the ingredients and quantities as you’re mixing the cocktail.
