Shouldn’t that meaningfully increase the density of marshmallow on his legs and feet? Or, despite the incredible squishyness of marshmallows, would their low density cancel out the effect?

You couldn't survive on any amount of marshmallow because it's not all about calories. You need other nutrients, vitamins, and minerals in the food you eat.
Because Science and Film Theory got two very different answers. Because Science got 7 million calories as an answer while Film Theory got 32.6 million calories as an answer.

If the Stay-Puft Marshmallow man was made out of Jet-Puffed Marshmallows (aka the only brand worth eating) he would would have calories per gram. JPMs have 100 cal per 29g or 3.45 cal/g (172.41 calories per 50g). However JPMs also appear to be significantly less dense than average Marshmallows with density measurements of the mini variety coming up to ~.19g/ml making them over 2.5x as fluffy as the standard marshmallows that exist in Kyles void!
Using the Computer Estimate of SPMM volume that would result in a mass of only 855,450.528 kg and only 2,951,304,321.6 cal. So you would need almost 5 Jet-Puffed Marshmallow Men to feed those New York gluttons for a single day.

How can I teach myself to to understand the length of a meter? Example being...If Kyle said that it was 40 feet tall then in my mind I can already see and comprehend it's height. But I have no understanding or reference to know the length of a meter.

I don't think "The Staypuft Marshmallow Man" is really all that big. The spectre that chose his form though is obviously what we're talking about though. I don't envy the Staypuft PR department after their mascot rampaged through New York.

anyway, for the volume if you had a toy model of the marshmallow man lying around or could get your hands on one, you could do a water displacement test to figure out the actual volume:height ratio and get a more accurate reading, assuming the toys were proportional to the movie.

Since he's not.. it's the "magic" to this show. He is facing the camera on the right hand side using his right hand writing on glass.. doing it that way makes everything look backwards so they flip it in post horizontally so that you can read what he writes without having to write backwards.
