    I love how customizable quiche is. This is a good candidate for your “Crazy” series, where you can take a single quiche recipe and make mini quiches all with different add ins!

    Hi Gemma ❤️, I love this recipe!! My mother would take me to a little Cafe every now and again , just the 2 of us . We would always have Quiche and salads! I felt so sophisticated 😊.     When you’re moving into a new house and all your pie plates and pie weights are at your other home…use what you have… in my case it was a cast iron pan for your pie plate and and a bunch of russet potatoes inside a crockpot inset for pie weights. So good hubby had a second piece.

    This quiche looks absolutely delicious, Gemma! Do you think this pastry crust would work using gluten free flour? These days I seem to have a lot of friends who are avoiding gluten!

      Technically, you can. However, part of the flavor profile is the crust. If it is a preference, then go for it. Hope it turns out well for you.

      You can use fresh mushrooms. I sauteed the fresh mushrooms first. You can use steamed, sauteed, roasted, or diced vegetables such as spinach, broccoli, mushrooms, kale, onions, peppers, or cherry tomatoes, as they add more flavor.

      I haven't tried it, but it is possible. You can use cornstarch to thicken a dairy free cream or milk. I can't recommend measurements as I have not tested one in our kitchen, but yes, it is very much possible.

      Chickpea flour was recommended as an egg substitute in the quiche Lorraine recipe. I picture the dairy could always be swapped with non-dairy milk or cream.

    How can I make eggless quiche?

      You can use chickpea flour, or garbanzo bean flour, sets up and binds with other ingredients while baking. It also creates a similar texture to eggs once baked. It has a very neutral flavor, so it shouldn’t overpower your quiche. I suggest adding 1 cup of chickpea flour to the cream mixture. Hope this helps.

      @@FreeTheCreativity If you are referring to the material used to weigh down the crust during blind baking, Gemma was using old rice in the video, but she did mention several other ingredients that you could use, including sugar. I looked up the melting point of granulated sugar. (I found a very helpful article in Scientific American). The melting point of granulated sugar is 375 degrees Fahrenheit. Therefore if the oven is set to 350 degrees Fahrenheit and is accurate, the sugar will not melt.
