  • Lavender came to Provence 2,000 years ago. Since then, many have described it as the soul of the region. Lavender thrives in this arid terrain and its flowers are used in all sorts of ways: essential oils, perfumes and household products.
    But today, the soul of Provence is facing the dire consequences of climate change. Every winter, the flowers used to be covered by the snow which protected them from the worst of the frost. But in recent years, there hasn't been much snow, so the plants have had to adapt.
    And that's not all. When the snow melted, it used to replenish the groundwater. Now, the subsoil is as dry as bone.
    We meet with the Fra family who have been taking care of this plant for generations and who are determined to keep it thriving for years to come.

    We live in one of the rare areas where lavender grows well for industrial uses. Low heat, low rain, and fast draining, rocky soil. Love the smell of the leaves over the smell of the flowers. Love using the flowers in chicken dishes, and desserts.
