This shrimp recipe is very easy and quick to make, but it is very delicious. I used small sized prawns but you can use medium or large sized ones as well.
Ingredients required for making shrimp masala - Serves 4 to 5
* 580 gm/1.3 lb shrimp or prawns
* 250 gm/ 9 oz / 1 very large onion
* 20 gm/ 1 oz ginger
* 20 gm/ 3 large garlic cloves
* 300 gm/ 11 oz/ 2 large red tomatoes
* 1 & 1/2 teaspoons Kashmiri red chilli powder. Please adjust proportion according to your preference. You can also use a combination of paprika and chilli powder or only paprika if you want to avoid the heat totally.
* 1/2 teaspoon turmeric powder
* 2 teaspoons ground coriander (dhania powder)
* 1 teaspoon ground cumin (jeera powder)
* half a teaspoon garam masala powder.Home made Garam Masala - âą 3 MUST HAVE HOMEMADE I...
* 1 teaspoon heaped salt or as per taste
* 1 teaspoon sugar (optional)
* 1 teaspoon Mexican crema/sour cream/heavy cream/any cooking cream/4 tablespoons coconut milk (can add more)
* 1 green chilli (optional)
* chopped coriander for garnish
* 4 To 5 tablespoons oil
Serve it with hot steamed rice.
** Please note that shrimp gets rubbery if overcooked.

Bumbi, the sugar is not optional. It is mandatory for the flavors to congeal together. I used to underestimate its importance in Indian cooking, but there is no doubt that suger is a crucial iingredient. Unless one is diabetic, a tablespoon of sugar won't hurt you for what would be 3-4 servings. This clip looks to be an excellent recipe that I will have to try out in the not so distant future.

Sugar is NOT mandatory. It is exactly used for what Bumbi said! It reduces the acidity of the tomatoes! Its not because people have a sweet tooth!
@@nickymatharu Which is precisely why sugar is mandatory for my tastes. It's not about the sweetness. It balances the acidity of the tomatoes and heat of the hot peppers. I most often use jaggery for Indian recipes which is a bit different than a refined sugar. The type I get comes in portions that are bit more than a teaspoon. As Bumbi said, it's optional which I choose to follow. A little bit goes a long way. I have since made this recipe a couple of times. It's super tasty.
I have substituted honey for years with no complaints from anyone!

I used to work in an Indian restaurant in Southall England at the age of 23.
This shrimp dish and Bhindi Massala were my favorite dishes in that restaurant.
This May, after 35 years, I will be paying that restaurant a visit. The name of the restaurant is Moti Mahal, and yes, it's still there in Southall UK.
I do make this for my family whenever we feel for shrimp. Soooo delicious!
Stuffed bitter melon is also another favorite of mine, but that is an acquired taste for anyone who has never tried this vegetable.

Growing up, shrimp had a fantastic rich and sweet flavour and was one of my favourite dishes, though our family could afford them only rarely. Nowadays shrimp are all farmed and have NO flavour AT ALL. Most have been frozen for over one year before the consumer gets them. I wouldn't bother making this unless one could get fresh wild shrimp in the shell, for maximum deliciousness. (This is not a criticism of your clear and wonderful recipe.)
Bumbi - my wife and I wondered what pan you recommend - it looks like you are using a stainless wok, but what size or brand is working for you (and curries)? Any advice is appreciated! Thanks again for the recipes!
It is 12 inch Calphalon triply stainless steel wok pan. Any heavy bottomed wok will be good. Ceramic woks are also great. Just keep in mind that they need to be heavy bottomed or else the spices may burn.

Just one question. Do you use cooked peeled prawns from the supermarket or fresh raw prawns as we do back home?
I always use raw prawns as the cooked ones are not at all good for curries
In the Philippines đ”đ, adding sugar to the recipe is just normal, it helps to enhance the flavor.
I know fresh garlic and ginger is best but is there a big difference if one uses powdered ginger of garlic instead?
Yes it brings a big difference in flavors
