    💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. Karen has been working for Hercules Candy since the twins (Craig and Cara) were about 6 months old and everybody else is a new recruit. Don’t forget to subscribe and hit the 🔔 for more videos!

My grandma saw a candy maker pure peanut brittle on a marble slab and told may mom that she could use her marble kitchen table to make brittle. Long story short took 2 weeks with hammer and screwdriver to get the peanut brittle off the fake marble table. Best peanut brittle ever. Got her a reject marble headstone back in the 90’s and still use it for brittle. Miss you mom.

I used to make hard candy with my Mom’s recipe - flavor (oil) and color in the pot once it was hot enough - then we poured it on a cookie sheet that had a layer of powdered sugar on it. Then the hard part - cutting it with scissors when it was cool enough to stay in little pillow shapes but warm enough to cut - major mad dash, with friends to help. Then it all gets tossed with more powdered sugar - to say the process coated the kitchen is an understatement. 😂😂😷

I just want to say that I’ve disappeared from your channel for a long time… perhaps 5-6 years as my estimate. I never did subscribe back in the day, for some reason I never subscribe to the gems of CZcams. I always trusted my algorithm to bring me back when the time is right.
Well, here I am, and I see you guys haven’t aged a bit!
I swear to you that I LOVED the videos you guys were putting out.. I remember a few nights I missed out on sleep just to watch you guys (I don’t recommend doing this as much as you viewers may want to). I loved seeing your family and friends in all the videos behind and in front of the camera.
The corny dad and mom jokes were always great and well timed and your videos made me feel like I had a seat in your home. I thank you for going into this business and I thank you guys for sharing all those moments with the world.
This channel will always have a special place in my heart. You guys really brightened many early mornings, afternoon snoozes, and many sleepless nights. You didn’t make my days great, my days were great when I was blessed to wake up… you made my days SO much greater.
    Sincerely,
    A very long-time & thankful fan,
    Josh

pls do candy makers react to tanghulu ! it's a popular chinese treat that consists of candy coated fruits. it's traditionally made with hawthorn, but people have also been using more common fruits such as strawberries and grapes. lots of people on tiktok attempt to make it, and im sure steve and terry can give them their professional insight ! btw i love your candy and this channel :)

When I was a kid, years and years ago lol, we made hard tack candy. I believe it is very much like your candy. we would pour it on a cookie sheet, let it cool completly, then take a hammer to it or pick up the pan and drop it. The last step was roll it powered sugar. Yes the edges were sharp sometimes but we were kids and we just eat it up. And before you ask yes mom did most of the work.

I know you probably don't need another bark suggestion, but this is one that we made with my grandmother. We kids called it Chunky bark (after the candy bar). All it is is milk chocolate, raisins, and chopped peanuts. Every time I see you making any bark, it reminds me of my grandmother's farm and cooking in her kitchen.

I rarely made hard candy, but when I did I used a cast iron pan I usually used for making muffins (English version!) on. Was about 18" diameter, had a raised lip and held more heat than a thin baking tray. Those I usually used for casting toffee and fudge :)

We used to make what we called taffy. We made batches, flavored and colored in the pan. Then we poured it out on big baking sheets. We didn't used gloves, but coated our hands in butter to pull small amounts and shape it. Then left it to harden. I remember making all different shapes. The gloves would have been nice. We had to pull and shape pretty fast before it would harden. It is a great family memory. You all make it look really easy.

That mess is exactly why my hard candy goes right into molds. And YES my “old fashioned stained glass candy” recipe calls for it to reach 303 degrees too. But should take it 310? I spray my molds with cooking spray. Before I had them, I poured it into a pan of confectioners sugar & broke them(that’s where stained glass comes from)
I use LorAnn flavorings. You’re right, some flavors aren’t very strong(like cotton candy).

  • @gwynnfarrell1856
    @gwynnfarrell1856 Před 3 měsíci +1

With such a small batch wouldn't you just leave it in the cooking pan, add the color and flavor off the heat, and then stir the mixture to cool it to the point where it's getting thick and can be handled with gloves? (How hot is the candy when you're pulling and shaping it?) Then it could be pulled a bit and shaped on a shortening coated cookie sheet? I wonder if "D" made two puddles so he could color one red? Probably need to have two cooking pans in that case. Fun video!

I can confirm the cookie pan on the stoves warming zone works well. The microwave in small 2 to 3 second bursts can help but the stovetop warming zone is much better. I stuffed mineral wool isolation between two layers of nithrile gloves and it worked, but it's rough. Do you guys use fda gloves or simple clean hardware store gloves?
