I made these today. They are amazing! I even had a family emergency (my 3 year old grandson broke his arm and I had to take him to the hospital) so I had to retard overnight in the refrigerator. They rose amazingly after I took them out of refrigerator and braided/rolled them. They are so soft and slightly sweet

Can I use active yeast instead of sourdough starter?
I have not made yeast version cinnamon rolls/buns with pumpkin. You have to convert the ingredients from sourdough version to yeast version.
This is the yeast version cinnamon rolls/buns without pumpkin if you are interested. Please read additional descriptions if you are trying this recipe. Ingredients in the video is incorrect.

Would it be possible to retard the dough overnight to bake them outside of the pans, and make a round braided mini boule shape instead of a muffin?
Yes you can shape any cinnamon rolls/buns you want and bake them not using muffin pan. Also you can refrigerate the dough overnight - please read one of the comments below who refrigerated overnight, braided and baked next day.
