MINI CARAMEL & CHOCOLATE APPLES

    Yields: 12 apples
    1 cup (200g) of sugar
    1/2 cup (120mL) of light corn syrup
    4 oz (115g) of salted butter
    1 cup (240mL) of heavy cream, divided
    1 tsp (5mL) of vanilla extract
    1/2 tsp (6g) of salt
    8 oz (230 g) of milk chocolate (will cover 8 apples plus extra for decoration)
    6 oz (172 g) of white chocolate (will cover 4 apples plus extra for decoration)
    Add Dark chocolate for extra contrast and variety
    DIRECTIONS
    Wash and completely dry the apples. Insert a stick into the bottom end of each.
    Line a baking pan with wax paper. Heavily butter the wax paper
    Put a heavy bottomed sauce pan over high heat, cook the sugar, light corn syrup, salted butter, and 3/4 cup of the cream. Give it a quick stir and then do not add any utensils to the pot. Wait until the mixture bubbles up and turns a golden brown. Remove from the heat and carefully swirl in the remaining 1/4 cup of cream, vanilla, and salt. Be careful with this step. This is very hot and it may splatter. Let the caramel cool slightly until it is thick enough to coat a spoon.
    Once it is cooled slightly, dip and turn the apples into the caramel to coat, shake the excess off, and scrape the bottom of the apple on the side of the pot. Arrange the apples on baking sheet. Let cool for about ten minutes. You can also put them int he fridge to cool.
    Put another sauce pan with water on low heat. Add a glass or metal bowl with two thirds of your chocolate in the bowl. Make sure the bowl is dry and the water in the pot is not high enough to touch the pot. let the chocolate melt about 3/4 of the way and then add the remainder of your chocolate. Repeat this step if you would like to use multiple chocolates.
    Use a spatula to mold extra caramel around the bottom of the apple and then dip your apple into your melted chocolate. (You can mix up the steps if you like and add your toppings first for some of the apples to show variety.)
    Add any toppings. I used almonds and walnuts, but you can use any that you like. Plus assorted chocolate candy bars. Then decorate with more chocolate.

      +Debbie Rathbun I absolutely love these! I just highly suggest saving yourself some time and buying your apples at the farmers market. The wax on store bought apples is a pain.

      +Pretty Handy DIY I buy mine at my local farmers market. I would suggest that over a grocery store that adds the wax on the apples, because it's time consuming to get the wax off

      +Paola Xavier Awesome!! I love Brazil!! :D I would suggest if you can, getting your apples at your local farmers market. You usually can find mini apples there and I'm not sure if they do this in Brazil, but in America, they put a really thin wax on the apples to make them shine. At your farmers market they won't do that, and it will save you a lot of time! Good luck :)

      Hey +Lovebites how've you been? Do you believe that I couldn't get to make the apples yet? I didn't find mini green apple, only the red one, but I'm ok about that. The problem is that I've been finding a lot of difficulties to make the caramel and I really don't know why. Would you have another caramel recipe? Thank You.

      I definitely don't have another caramel recipe. I tested this recipe a handful of times to make it perfect and I've been told it's the best caramel people have ever had. Can you tell me what goes wrong with it, so I can help troubleshoot the issue, and so you don't miss out on this caramel :)

      The two things I could think of that you might have done, is add utensils to the pot while the caramel is forming. This is very important not to do. Because your caramel won't caramelize if you stuck in your whisk or a spoon or anything. You only want to do it at the very end when you're adding in the heavy cream. Also, if your caramel is too watery and not brown enough, you didn't let it cook long enough in the pot. Are you also following my exact measurements? They are in the description box below the video.       the wax that is on store bought apples. You have to scrub it off and it's a pain. I always buy farmers market apples for that main reason.

      yes, the caramel should have time to no longer be warm otherwise the chocolate will melt off :)

    when I'm adding the rest of my chocolate do I need to turn of the heat ? and if not so when ?

      Yes, you can take the bowl of chocolate off the sauce pan, and add in the rest of the chocolate (turn off the flame) This helps cool the chocolate down. Let the other 1/3 of chocolate melt completely into the already melted chocolate, and it's ready for dipping. Depending on how quickly you work, you may need to put the chocolate back on the sauce pan, on low heat if the chocolate starts to firm up.

    I think your caramel recipe is supposed to be one stick or 4oz of butter. Not 8oz. With one stick of butter it turns out PERFECT.
