Good work on trunk chop on the first tree.

It appears you're just cutting out dead wood on a tree with normal leaves intact. I'd like to see someone tell us what to do with a maple that has all new growth completely wilted from hard freeze.

My Japanese Maple was just beginning to bud and got hit by freeze. No leaves this season. Will it come back?

I don't seem to have a lot of success with growing Maples / Acers, the leaves partially dry out , I do water modestly daily, one died this season, I just don't understand why, all my Acers are in containers. I live in a moderate climate.

I'll leave it the experts to answer your question; but, if you are watering the plant almost daily, it may be too much water.
