Think my mom's mee hoon kueh prob looks slightly thinner than hers @4:53, but her final product certainly looks like those you see outside. IMPRESSIVE!

Is all about the gluten structure. By kneading it, it helps to gluten structure to form faster. U can use a electric mixer with a S-hook to “knead” instead 😅
The amount of water used to make dough could vary by up to 20% and the reason for the difference could be the weather, temperature, etc. Therefore usually it would be recommended to add the water a little by little to see the texture. Good effort though! :) Glad u succeeded in the end~

Use the plain flour from prime deili. Add an egg and some salt to the dough. Texture is nicer if u leave dough in fridge over nite.

actually... if the dough is too sticky just add more flour to it, that what I usually do,
all u need is flour, oil, an egg and a little bit of water.

How I make mee hoon kueh is just flour and water
Other than Suphong from whom I actually learnt something useful, I gathered that cooking episodes by others are quite a waste of time. Hahaa but I appreciate the entertainment value.

Can someone explain why the dough was so sticky at the beginning? I also face the same problem.. is it due to the inaccurate water measurements or idk? I was thinking could it be because Singapore has higher humidity so that's why??

I think the dough was too sticky and she wasn't able to knead it probably (I'm not sure why though. I think it could be cause of the water). And also, before that she didn't roll it out thinly so when she cooked it, it was very thick!

Should have just followed the video recipe from the start than any humtum recipe on the internet. At least video recipe, you can see the outcome got chun or not then follow step by step. Text recipe any how can also say work but no see whether actually work mah.
After watching, I shall go eat Seletar Sheng Mian.
