    Thank you, a new dish for me to try! I will use chicken, and chili oil, but is brown sugar okay instead of white?, and could I use a bit of fresh ginger, or should I not? So excited to make this, as my general tso/tao turned out perfect! I really love your style!

      Can use brown sugar instead. You can add some ginger which is optional.

    Thank you so much for all videos. Love to try a lot but can't cope with chilli, just use a little sweet chilli sauce. Is fresh garlic and ginger best to use? sometimes I use bottle crushed. I learn so much and the taste I get is so different to other recipes. I have been using wrong temp in my wok.

      Generally moderately hot temperature is required for stir-frying. I always use fresh garlic and ginger. Never try the bottle type because wet market is just near me.

    Can I use fresh olives instead? We don't have preserved olives in our nearest shops

      The preserved vegetable taste different from the fresh one, so I suggest you omit it if it is unavailable. An alternative is to use other preserve vegetables, either Zha Cai or Sui Mi Ya Cai. Both are available at Amazon. Com., which I include the links in the text of the recipe post.
