I made Senegalese Inspired JOLLOF RICE -Thieboudienne: Senegalese Rice, Veg & Fish dish -No Tomatoes

INGREDIENTS:
Green marinate/stuffing ingredients:
* 2 bundles of flat leaf parsley
* 10 cloves garlic
* 1 habanero chili
* 4 jalapeños without seeds
* 1 large green bell pepper
* 1 tsp crushed black pepper
* Juice of 1/2 lime
* 1 tsp salt
* 3 medium stripe sea bass, 1 medium red snapper, and 6 small steak cut grouper all cleaned. Stuff with green marinade.
Yellow marinade/Jollof base broth ingredients:
* 10 cloves garlic
* 3 sweet chilies
* 1 habanero chili
* 5 miniature sweet peppers (yellow and orange)
* Small 1/2 thumb size ginger
* 2 medium yellow onions
* Tsp crushed black pepper
* Tsp salt
* Pinch of dried chili flakes
* Optional 1 tsp vegetable or chicken bouillon
Dawadawa/locust bean finishing condiment ingredients:
* 1/4 cup locust beans (substitute with miso paste)
* 1/2 medium onion
* 1 tbsp yellow marinade
* Juice of 1/2 lime
* Optional 1/2 tsp bouillon
* 1/4 tsp salt
* 1 tsp dried chili flakes
Vegetables:
* 1 small green cabbage
* 1 small cauliflower
* 2 small pieces of peeled cassava or yuca
* 1 small sweet potato peeled and cut into big chunks
* 1 or 2 Egg plants
* 4-6 whole okro
* 2 to 4 habaneros left whole
* 1 small acorn squash
* 1 small butternut squash
* 6 miniature sweet peppers (assorted colors)
Other ingredients:
* 2 cups cooking oil
* 1 small koobi/salted tilapia
* 2 small pieces of cured fermented fish (substitute with 2 tbsp fish sauce)
* Optional fermented snail
* 8 cups broken jasmine rice
* 1 & 1/2 liters hot water
* 1 tsp dark soy sauce
* Salt to taste

I am truly convinced that Senegalese may have invented jollof rice. Theirs makes a lot of sense to me, nutrients-wise. See all of those vegetables and greens. I must try cooking this often here in Dubai. I must cook this for Christmas. Guests will love it.

Chef nanaaba this one is Thanksgiving food oo, not a usual luncheon for the family to eat in time. But it's really nice 🙌 I give it up for Senegalese jollof, the umami Incorporated in this one dish makes it a winner already.❤❤

I really love your channel and I admire the work you put on it but sorry this is not the way we cook our national dish please we don’t put onions first before frying the fish no you fry the first first in the hot oil then you broun the onions
