She's a machine! When does she sleep?? She puts so much love and effort and passion into her baked goods and the food she makes it would take a lot out of her so Im so relieved that she has limited days of operation so she can rest and recoup. Wonderful and delightful food to have your food described as "gentle" is exceptional! Bravo and my hat off to this dear lady.

I was so shocked and makes me wonder how can she prepare and baked these all by herself everyday? and then i realized her store only opens every Wednesday and 2nd & 4th of Saturday.....no wonder she looks relaxed and systematic while she bakes and prepares all the bread and she delivers it with joy and high quality...very impressive!
She doesn't have those big bakery ovens but she still delivers! Respect!

These cake/bakery shops are everywhere in japan and I am sure they do very well but if they open a store in my town, she automatic turn millionair within a year. They just seem next level with thier dedication and finess not to mention the professionalism and quality of product.

impressive! This lady is running a business using mostly home bakers' equipments and home bakers' baking methods. There's no additives and dough stabilizers added to her bread. Everything is done in small batch. This requires so much work on her part! I also want to comment that the local environment there must be friendly to small businesses. In America where I live, this style of one man family business is impossible to maintain due to the high cost of running a business. After all the prohibitive cost of setting up a commercial kitchen, passing the gazillion inspections required to operate, it simply won't be profitable if you run a one man operation. You won't even make enough money to maintain all the ongoing costs to keep it running. There's the rent , insurance and utility cost, and various continuous inspections to keep it running. Plus there's liability cost that comes with insurance.
