    The thing with sesame oil is that there are two types, light sesame oil and dark sesame oil. I read that in chinese cuisine dark sesame oil is very often used, maybe they don't use light sesame oil much? But idk, if Chinese people could clear that up it would be nice. But that would explain why Uncle Roger is so adamant about not using sesame oil for cooking. Dark sesame oil has a lower smoke point and is made for adding flavor.

      I didn't know that, I knew about dark and light soy sauce (and saw the difference firsthand). I've cooked with sesame oil once and never again, though. Not only is it super expensive and won't actually add any flavor to your food if you get it hot enough to fry, you will smell nothing but sesame for the next six hours.
      Much better to put it on food raw at the end.

    The reason Uncle Roger disapproves of sesame oil is because sesame oil has a low smoke point, so you cannot fry with sesame oil. Same goes for olive oil. But since Japanese cooking generally does not use high heat (unless grilling), then you are probably able to use it with no problem.

    I believe I read a while ago that there are two types of sesame oil - light sesame oil and dark one. The darker one is supposed to be used for flavoring, like Uncle Roger said, but the light oil can be used for cooking?

    It is really great when youtubers put even a little bit of effort to making the sponsorship parts actually entertaining. First one I personally saw doing this was Nostalgia Critic. His comedy bits about the sponsors are actually funny, so you don't get annoyed about mid video adds

    The reason why not to use sesame oil is because sesame oil has a low smoke point; the temperature where the oil starts to burn. When cooking in a wok, most recipes tend to use high heat, which can make sesame oil burn and have a bad flavor. So it is better to use oils with higher smoke points, such as peanut or soybean oil, which are less likely to burn during high heat cooking. They are neutral oils as well, unlike sesame oil, which means you can use larger quantities without having to heavy of a flavor. So when frying in a wok, you use peanut oil or soybean oil for the frying, and a little bit of sesame oil to add flavor.

    As far as I know Msg is not legal to sell by itself in Australia. Although I think its an ingredient in some soy sauce brands.

      You can buy MSG by itself in Australia. Go to any market or Asian food shop that is not Coles or Woolworths. Coles and Woolworths do not sell it owing to bullshit grounds by those silly "worried" mothers that do not have anything better to do.
      MSG is like salt but better, you do not see any one leaping up and down saying they wish to ban salt, do you?

    sesame oil, as far as I know is used for spicing the food not for frying or cooking the food with it.
    for that I usually use vegetable oil like canola oil or soybean oil maybe olive oil for sauteing.

    Glutamic acid was discovered and isolated by Karl Heinrich Ritthausen, a German scientist 42 years before Kikunae Ikeda isolated it to use as a "spice"(spice isn't right, not sure what word would describe it better though). The reason I know this is because Ritthausen also discovered aspartic acids, the main ingredient in SAP(super absorbent polymers) and in polymerized form makes PASA(Polyaspartic acid) which is used as a biodegradable water softener. Besides regarding MSG, it doesn't actually make food taste better, it makes bad food taste better which you could already solve by not buying bad food.

    Attracted to the bad bois? Mmmm. Sesame oil is different amongst Chinese diaspora people - it is rich and toasted - used for finishing dishes. In Japan, and amongst the Jains or high caste Hindus sesame is everyday oil, but much lighter. In the U.K. we are more likely to use rapeseed (canola in the USA) oil for everyday cooking - low smoking point.

    It seems like woks are uncommon outside of Asia in general. I personally have one, and I've had it for years, but unfortunately I don't get its full benefit where I live right now, as we have electric burners instead of fire... it's not quite the same, as the sides don't get nearly hot enough to properly microsear the rice. I will still use my wok for stir-fry or preparing ingredients that don't need a lot of exposure to the heat, such as minced garlic or mushrooms, but fried rice gets made in a frying pan made of steel since that seems to be the best way to make it in the absence of a wok exposed to flame... it still cooks roughly the same way... roughly. It's a good alternative for when you don't have optimal conditions for making it but still wanna make it anyway. :)
    And get that avocado on toast shit outta here... wtf... who actually eats that...

    I made Egg Fried Rice with my brother, once. We had tofu and everything, dried it and cut it. We used Sesame Oil too. It was really _really_ good lol

    I have two Woks. And I'm white... well... complexion wise not so much. My wife's Japanese friend asked what kind of asian I am. I'm kind of a light olive tone. Dark hair, but blued eyes. Maybe like a blue eyed kazakh. Maybe I should make a white American guy cooks fried rice video.

    I think how foreigners cooked rice is showing how to cook the rice before rice cookers were invented. And I had to think it's kind of a good thing. Because it's a good method when there is no electricity in the house and you need to cook rice immediately.

      @@evouzermemet5120 really? I didn't think gas stoves were so cheap in other places. Where I live there's no noticable price difference between gas stoves and electric stoves. Gas stoves can get quite expensive too. Unless you're talking about actual wood fire stoves. But at least here only some very old houses in the countryside still have those, bc houses these days aren't built for wood fire ovens/stoves anymore, so they became basically an expensive luxury item. But I don't know what the stove situation is like in less developed countries.

    Not going to lie, I'm American, but I don't own a toaster. I hate any appliance that's just used for one thing. I do have a toaster oven that can toast bread and be used to cook other foods as well. Why would I get a rice cooker when I've already become an expert with steaming it in a pot? I literally don't have the space in the small apartment. Wok seems unnecessary too, but I do happen to have one. I've tested a saucepan vs. Wok and I really can't tell the difference in taste. That's just me though.

    Australia is closer to Indonesia. In Indonesia they don't use MSG as much I think. My grandmother is Indonesian. And we don't use a rice cooker and we don't use MSG because it is supposedly bad for your health.
    Just use shrimp paste instead of MSG

    You said you think many people in the west don't have a wok, but Australia is in the East lol. And this guy does have a wok, I saw it in an older video of his so not sure why he didn't use it lol. I love your videos, you always make me smile! I'd love to be your friend, and by the way, it's okay to like and date guys that look like bad boys, not all of them actually are bad boys! But the look is what is attractive. So the look, plus them being a good guy = WIN! lol
