    After his reaction video, Hersha was criticised for her fried rice technique but she was in a good spirit to accept criticism so she became friends with Uncle Roger and ended up as Uncle Roger's regular cast in his videos.

      @@TokyoFoodieSarah the method of straining and washing rice is what Indians do to make Biryani. the thing is, is that it works for their specific kind of rice grain: basmati rice, a very tough, long grain rice. it will not work for japanese, chinese, thai or other rice grains, not only because of the difference in starch content, but also because of the quality and toughness of the grain. you will just ruin the texture of the rice.

      we don't use rice cookers in the west so when we finish cooking there's always a little water left so we strain a lot to get rid of excess water. Obviously it's wrong, probably another reason to get a rice cooker

      @@idleeidolon I think others have noted that it parallels how Europeans strain and rinse pasta to stop the cooking process once it's removed from the heat source to keep it al dente. Also, because pasta is usually immersed in boiling water and doesn't absorb as much as rice, straining the excess water is a necessary part of the process. But when cooking rice, if you end up with excess water in the end, it usually means you started with too much water in the beginning. Also, as you mentioned with Basmati rice, pasta noodles are structurally hardier than most East Asian rice grains so they can take the extra post-cooking rinse without deteriorating.

    In India and Nepal, many traditional people drain the rice after it's cooked and trust me, if you are cooking indian rice, using more water to cook rice prevents it from sticking with forming cluster. After rice is cooked, that excessive water is drained.... But that's mainly for Indian food varieties. But, even in India and Nepal, we wash rice before cooking and obviously not after cooking.

      I’m an Indian and I’ve NEVER strained water from rice! My mother would wack me on the head if I ever did that 😜 Basmati rice is supposed to be cooked in 1 part rice to 2 part water and cook on low flame. Wash your rice before cooking to remove the starch. Add a bit of oil and salt. You will get the best separated cooked rice grain ever! I’ve never seen anyone strain water from cooked rice

      @@sakshigoyal5111 that's cuz you cook rice which doesn't need much water to cook my dude. Here in south India, we normally cook rice which needs a lot of water and we do it in bulk so we have to strain it but not using colander but by a different way

      I'm nepalese and I've never seen anyone do that there are different kind of rice some are clumpy, some fluffy but I've never heard of a particular kind of rice that requires you to drain excessive water
      first of all, there shouldn't even be excessive water
      if you actually do that just measure the water so there's no need to do that

      That was in older times when they cooked rice in open pots.. if you estimate it right then you don't need to drain it in the pressure cooker or rice cooker

    Also I use MSG in garlic fried rice, it adds umami because it is not fancy as egg fried rice or chahan. It's just a leftover rice fried in salt and garlic.

    Just wanna put this for the record: She violated the first rule of making fried rice. And that is to USE COLD LEFTOVER RICE. By cooking rice fresh and immediately using it to make fried rice is a huge no-no! The rice has to be separated from each other!
    I live in a Filipino household in Hawaii (born and raised) and when we make fried rice, we use leftover rice chilled from the previous day. We never EVER use freshly-cooked rice for fried rice.

    I remember when these videos blew up and were recommended to me by the algorithm. Uncle Roger (Nigel Ng) is a very funny comedian. He had a bit of controversy over a deleted video he made with another CZcamsr (Mikey Chen). His past videos on egg fried rice reactions are worth watching.

    The funny thing is she and Uncle Roger became friends because of that video. They've done a few collab videos, one he goes to her house to make fried rice. It's pretty funny. You should check it out. Steven He is another funny channel, he doesn't do food though. He does what it's like to grow up asian videos.

    well everyone wash the rice before cooking it not after but drying the rice is pretty common in middle east and north african countries so you can say there is 2 type of cooking rice.
    first is the one used in china-japan-korea and...
    and second one used in india-pakistan-iran-irag-egypt and...

    Old video, but I married a Japanese lady back in 94 and she showed me how she liked her egg fried rice. She liked it when I cooked the eggs after I put the rice in the pan instead of pre-cooking the eggs. Other than that well and I hated peas so no peas but other than those things what she asked me to cook was pretty much this.

    It's how they say to do it here in The Netherlands on the packet of rice: Boil for 10-13 mins, drain and let steam in pan with closed lid for 5-10 mins. No need for a colander necessarily. It's how I did it until a few months ago, and it does work pretty well, but uncle Roger made me buy a rice cooker and now I can't go back.

    Who is to say some tiny pieces of egg shell did not fall in the container also; not showing on the video. 1-hand egg cracking should be corroborated with close-up camera view in the container to see that no egg shell pieces fell into it.

    You're right about the cooking mentality, and Uncle Roger usually isn't really serious, it's a comedy show. He even made a video with Hersha later.
    Also in some of his newer videos you can see a bit of his real personality, he actually seems pretty chill.

    Rice cookers are everywhere. You can buy small, cheap ones for like 30 dollars in the USA. I have one, can cook three cups of rice no straining needed. Literally don't have to think about it.

    I make egg fried rice all the time at home (I am British, in the UK)... It's not scary at all. BUT, YES, Sarah, thank you for making me feel so much better! I normally use Japanese style rice for meals, but I just can't get it to fry well, so I use basmati rice for frying. It makes me feel a LOT better to know that Japanese people also have this problem! When you make fried rice, what type of rice do you use? And do you have any tips for frying Japanese style rice?

    Washing rice is not always better for some Latin dishes like Gallo pinto or Cuban Arroz morro Personally tend to not rinsing it but when it's white I do rinse though

    I do egg fried rice typically with Basmati rice. It's not that I think it's better but my family barely uses 9kg per year so I only buy Basmati.

    A bit late, but I searched up what "wang" means. Apparently, it's UK slang for "penis", so Uncle Roger saying don't put your "wang" anywhere near egg fried rice is a dirty joke, followed up by him saying that's how he got fired from the Chinese restaurant he used to work at, hinting that he did some weird stuff to his fried rice 😂

    Ah yes, Uncle Roger!😆I agree with you about food - anything is generally fine as long as you enjoy making and eating it! But as you mentioned, there's a serious side to this video too. These egg fried rice videos are quite funny, but they address a real issue (in addition to basic rice preparation, which is pretty much inexcusable for a cooking programme lol) - food is the ultimate cultural ambassador and when you have the opportunity to share something with a large audience, it's your responsibility to be respectful and knowledgeable of your source material. It doesn't take much effort to research something these days, and it's frustrating that this kind of thing still happens so often. If they presented it like, "oh here's a version of something", it might be received differently. But I guess it contributes to a bigger picture of cultural distancing as long as little things like this keep happening! If that makes sense.. Oh yeah, if you want to react to more, there are two other videos in the egg fried rice saga: Uncle Roger reacting to Jamie Oliver, and Gordon Ramsay. Best viewed in that order!😆

    I know your trying to be polite but it is ok to be offended by "rice abuse" I'm not Asian and I'm offended when cooking certain items there are just some things you don't do to make that component of the dish properly.

    Induction stove is better in many ways. Induction is faster, safer, cleaner, and more efficient than either gas or electric. Also, it doesn't pollute your indoor air, and is less likely to start a fire.

    Wow, this is funny but I couldn't help but notice your hand nails. That's the way you do it.
