- FULL RECIPE:
3 3/4 cups white sugar
1 1/2 cups light corn syrup
1 cup water
1 to 2 teaspoons candy flavor oil
1 teaspoon food coloring
powdered sugar for dusting candy
Spray cooking spray on a rimmed baking sheet. I like to use my silicone baking sheet mats on top of my cookie sheets cause then I don't have to spray with cookie spray at all cause they are nonstick. Now set that to the side.
Heat sugar, corn syrup, and water in a large, heavy saucepan over medium-high heat, stirring constantly, until sugar dissolves and mixture is boiling, about 5 minutes. Stop stirring and boil until a candy thermometer reads 300 to 310 degrees F (149 to 154 degrees C), about 25 minutes.
Remove from the heat and stir in cinnamon oil and food coloring. Pour hot mixture onto the prepared foil and allow to cool and harden, I like to let mine sit and harden for about 1 to 2 hours.
After it is harden i cover mine over the top with cling film, then whack it to break it into pieces using the edge of a metal mallet.
Then a take a big bowl with a lid put 1 cup of powder sugar in it, put my broken up candy pieces into the bowl, put the lid on tight and gentle shake to dust them with powder sugar.
Powder sugar helps the pieces not stick together.
Storing homemade candy is like storing any other candy. It needs to be kept in a cool, dry area. You can store it in mason jars, a bowl with a lid, or any airtight container. It can last at least a month or longer if stored properly.
There are so many flavors of candy oils out there, you choose what you like, Watermelon
Strawberry, Lemon, Green Apple, Blackberry, Cinnamon, Peppermint, Spearmint, Orange Cream, Rootbeer, Cotton Candy, Blue Raspberry, etc.......
The best brands I like to use of flavor candy oils is LorAnn brand or Frontier Co-op brand.
You can get them almost at every grocery store, and also online too.
HALF RECIPE:
1 3/4 cup, plus 2 tablespoons of white sugar

There's the half recipe, I hope it's right math wasn't my best subject in school lol!
Follow directions just as the full recipe, but pour into a sprayed metal 9x9 pan.
If I make half a batch i line my pan with nonstick aluminum foil, and spray it alittle with cooking spray just to be sure and safe it won't stick.

Thanks for the video Sara. I used to make this with my dad, we would cut pieces with kitchen shears and roll them before putting in the powdered sugar. I like this because you don’t have any sharp edges. You have to work fast before it hardens. Merry Christmas!! 🎄

I grew up with rock candy and they were always brilliant colors and either on a stick or had some sort of twine set up in between the pieces so it would be like a rope of rock candy. But the colors were brilliant! So I am not feeling the color for brilliance that I am used to when I think of rock candy. With that being said, I am a Yankee from Boston and maybe you are using that confectioners sugar to get a snow effect? if so, looks good! in the dead of winter up there the last thing I am looking for, is a snow effect on a piece of candy😂😂😂

Hi Sara! I dont think your thermometer was working. The sugar was way too dark on the 2nd batch. It's ready when it's just a light yellow color (or when it creates a brittle line in water). That's why the color didn't look right on the mint one. Although the first batch looks good!

Sara, I think you got your food additives mixed up. You see, when you make a mint candy, one usually envisions a vibrant green color. Your mint candy, however, looks brown... Like maybe instead of green, you accidentally grabbed the color "Ode to the brown stain in my red chair." Things happen though, it still looks partially edible.

Try it with Stevia. No idea if it would work but worth a try. Won't be clear without Karo but agave syrup may work. Just some thoughts

My sister-in-law makes hard rock candy and it's just awful. I'm not exactly sure what she does wrong, but I suspect she uses cheap flavoring from the dollar store. She also makes these dreadful chocolate covered Ritz crackers. Every Christmas she sends us some and they go right in the trash. Not everyone is a good cook and she's proof of that.
