3 Breakfast Recipes
Pudla Sandwich
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 2
Ingredients:
1 cup besan
8 slices White bread
¼ tsp Turmeric powder
½ rsp Red chilli powder
Salt to taste
2 Green chillies , finely chopped
2 tbsp Fresh coriander leaves , chopped
2 Tomatoes , finely chopped
½ cup grated Carrot
1 cup chopped Onions
Chaat masala as required
Oil as required
1 cup grated Processed cheese
Method:
Make a thick batter with the besan, turmeric powder, red chili powder with sufficient water. Add a little oil to the pan. Dip the bread in the batter and toast on one side. Top the other side with chopped onions, carrots, green chilies, tomatoes, cheese, chat masala, flip and cook on the other side too. Grate cheese over the veggies side, cover with second slice and cook till the cheese melts. Serve.
Goli Idli
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
1½ cup rice flour
1 ½ cup water
½ tsp salt
1tsp ghee
for tempering:
2 tsp oil
1 tsp mustard seeds
1 tsp chana dal
1 tsp urad dal
1 dried red chilli
1 pinch hing
A few curry leaves
1 green chilli, finely chopped
1” ginger, finely chopped
2 tbsp coriander, finely chopped
Method:
Boil the water with a little oil, salt. Add the rice flour, mix thoroughly and cover and rest for 5 minutes. Knead the dough till smooth. Break into marble sized balls. Steam the balls for 10 minutes.
Heat oil in a pan, add the tempering ingredients and sauté for 1 minute. Add the steamed balls and tossfor2-3 minutes. Serve hot.
Aloo Chila
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
2 potatoes
½ cup besan
¼ cup rawa
¼ cup maida
2 Green chilies, chopped
1” Grated ginger
2 tbsp Coriander leaves
½ tbsp Chili flakes
¼ cup Chopped onions
Method:
Peel and grate the potatoes. Soak in water for 5 minutes. Drain the water, add all other ingredients and mix well. Add water as required to make a thick batter. Pour ladleful of the batter over a medium hot pan to which 1 tbsp oil has been added. cook on one side till crisp, flip and cook to crisp the other side too, serve.

In first bread slices, you sprinkled all veggies on raw besan. It didn't cook properly after flipping. So, better cook besan from both sides, then apply toppings and cook again.

Please be aware that unhealthy amounts of cheese and butter are used by the street vendors. Instead of keeping their food in mind and replicating the same, its better to make a healthier version of their food at home. Im not saying dont use butter and cheese but just be mindful of the quantities added 😊 many times "less is more" 🙃
