Thanks to our practical method, you can prepare the recipe once and have your pumpkin spice latte syrup for days! In addition to that, we're giving you the recipe for the delicious Turkish Pumpkin Dessert 😋

Starbucks Pumpkin Spice Latte Recipe
1 kg pumpkin, roughly chopped
300 g sugar
A pinch of salt
Half nutmeg
1 heaped teaspoon cinnamon
5 allspice seeds
12 cloves
Walnut sized ginger, peeled and cut into strips
300-350 ml water
10 g vanillin powder or ¼ vanilla pod beans or ½ teaspoon vanilla extract
500 ml milk, 2 cups
3 heaped teaspoons Turkish coffee or 4 shots espresso
Whipped cream
For the pumpkin dessert
Tahini
Walnut, chopped
• To make the pumpkin syrup and pumpkin dessert, cut the green parts of the pumpkin. Green parts usually tend to be less sweet, so it would be better to use them for a soup or any savoury dish. Put the pumpkin and sugar in a pressure cooker.
• Add a pinch of salt, nutmeg, cinnamon, allspice seeds, cloves, vanillin powder to season.
• Add the water and close the lid. Set the pressure setting to high. When the lid is tight and the pressure is enough to cook, place the pressure cooker on a small burner on low heat. Cook for 6-7 minutes.
• If using a regular pot, cook witg more water until pumpkins are softened
• Meanwhile, pour the milk into a saucepan to heat. Before adding your milk to a saucepan rinse it in order not to stick to the bottom.
• To make the Turkish coffee, add the coffee in a glass and pour the boiling water in it.
• Let it sit for about 30-40 seconds and start to stir and count until 100. Wait until coffee grinds sink in the bottom. Your fast Turkish coffee is ready.
• Transfer the pumpkin in a large dish. Leave 3 pieces of pumpkin and the excess water in the pot while the stove is still on.
• Sprinkle some cracked walnuts and drizzle some tahini on it. Your gorgeous dessert is ready.
• Sieve the pumpkin juice and mash the pumpkin pieces through the sieve. That will be your syrup.
• Now it is time to make pumpkin spice latte.
• Add your pumpkin syrup in a glass to your taste. 10-12 pumps would do great.
• Pour the Turkish coffee or espresso shots and milk.
• Serve immediately, top with whipped cream and a pinch of cinnamon, allspices. • Enjoy!

My squirrels dropped pumpkin seeds in my garden and so this year I had about a dozen small pumpkins. This is such a great way to use some of them. You and all of your crew are so lovely. Refika you have introduced me to many new spices and have shown me how to use some that I had, but never did anything with (cardamon). I use sumac now in my hummus and now use tahini as I never did use that one before. Love all of your videos and again, am so glad you are back!!!
The ones the shops sell at this time of year are decorative and don't taste so good so it's fantastic you have tasty home grown ones

I really dislike Starbucks, so an alternative sounds great. My neighbour just sent me the link to this recipe, with the heading, "For all those pumpkins on your porch." (My sister brought over pumpkins to our Thanksgiving dinner, for decoration.) I look forward to trying the dessert!

I don't like pumpkin, but I bet this would work great with apples too. If/ when I attempt that, I'll have to account for apples being a bit tart, that might affect how it mixes with milk in the coffee... love autumnal spice blends regardless though. I'll be adding cardamom for sure, sometimes I also put anise in my stuff-- spices are just very good lol

As a roaster of specialty coffee in Vancouver, I'll just weigh in here. Arabica coffee is cultivated around the world, including Colombia. It requires high altitude and a micro-climate that allows coffee plant to survive year-round. Most high elevation places tend to get too cold for coffee trees to grow hence the grow zone being around the tropics. High altitude is necessary for a denser bean.
Robusta coffee on the other hand can be grown at sea level and is cheaper. Therefore it's preferred in instant coffee production. For example, it would grow well in Antalya and Marmaris.
So most Colombian coffee is Arabica. I just wanted to correct that. Arabica is a type of coffee and it is no longer limited by origin.

There was a local Turkish man who had a cooking store who was big on pressure cookers. Yours is very interesting. Would like to see more info on that as well just see if it has a shallow or deep rack on the bottom.
Very interesting pressure cooking skills. Don't think I've ever seen someone run water over the top of one but is makes sense. Especially was you were careful to avoid flooding thevent.
