She was given specific orders to capture him so they could learn more about Sidious from him. Maul wanted her to join him. Even then, the fight is not lost when he eventually disarms her, because she’s been trained to handle such situations. It’s like saying that Luke had a chance to beat Vader on Bespin because Vader was holding back. Luke had no chance. Luke would’ve lost to Vader on the Death Star as well if he wasn’t conflicted.
Vitiate actually isn’t that strong with a lightsaber. He’s insanely powerful with the ways of the force, that is probably why he doesn’t really use a lightsaber.
Vitiate's main gimmicks are his advanced Force powers and being difficult to kill with his body swaps. Sidious is a much stronger lightsaber user and is good enough in Force powers to hold his own. Anakin/Vader despite his potential, was never a great Force user when it came to more esoteric stuff like SIth rituals etc.
As much as I want to see Anakin reach full potential it’s never going to happen and I actually want it to stay that way. I think Anakin’s story is meant to give us a lesson on discipline. In Star Wars Anakin becomes the chosen one. With his high midichlorian count he barely has to work to outperform others. This gave him a cocky personality especially during and after the clone wars. For Anakin to reach full potential he would have to delve deeper into his force abilities which he never does; throughout the clone wars he Carrie’s his blue lightsaber which means he signifies lightsaber combat. So as much as I want full potential Ani to be a thing I don’t think it should be.
