    I love watching these cooking shows with the old time recipes. My grandmother was raised on foods like beef tongue, fish and chips, pasties, meat pies, fruit cakes, etc. This show gives us a generational spanning topic of conversation.

      Beef tongue, which I learned to love back on the farm, used to be dirt cheap, along with pork hocks, calf brains, and oxtails. Now they are trendy and nobody can afford them.

      Doesn't it seem like groceries "go bad," (seem to expire,) very quickly these days? Like the food is 'old' (older) when it arrives in store?
      Taste is slightly "off," and meats like hamburger and deli meats seem to age faster than before, 2021 is when I started to notice. Am I crazy?

      When I was growing up, during and after the second world war, my mother was very poor and had to make foods that could be purchased in a jar or can, including mayonnaise. That's how I learned to make mayonnaise, and still do...but not all the time. So, in those days, that's how I created "my Mayonnaise & Tomato Sandwich." It was extra tasty on her homemade white bread. Summertime was the best for my "Food Fair" because of the backyard garden, and the beautiful sweet tasting Tomato patch that I tended. A fresh loaf of her bread, a handful of leaf lettuce and/or sweet spinach put on top of thickly sliced still warm from summer sun, sweet juicy red Tomato, and then thickly slathered with her mayonnaise. To me that was an absolute feast. I can't bring back those days, but I remember them very well. In today's world, it's just an every day regular store bought $3.59 a pound tomato that doesn't have much of a taste, and a jar of Hellman's Mayonnaise. It's better than not having what I really want. So, Satan's Army Sundays, look what happens when you write the word Mayonnaise, and the memories that floods back into memory land for some.       Why waste your money on the books when you can Google it on the internet and you can still get those wonderful recipes think about it I do it all the time I don't have any more cookbook I don't buy any more cookbook I'm 75 years old I have cook since I was 11 so I never really went by recipe other than sometimes a cake that I wasn't familiar with then I would go about rest because that's the form I sent you you left the phone in case you might as well throw it out but if I want something new I'll go on the internet and I'll get me a new recipe that looks delicious and I'll prepare it

      My microphone is messing up what I'm saying and baking a cake if you're off of hair throw it away because you have to really pay attention to your cake recipes they can cuz it's a formula a recipe you can add anything to it but you can't take away that's what I was taught my children and my grandchildren are thank you recipes that you want to anyting but just remember you can't take away

    I'm of English, French, Dutch, and Lithuanian descent. Beef tongue was frequently in the menu, especially in summer when it was served cold with a sour cream, garlic, horseradish, and caper sauce on the side. If it is brought out on a serving tray and pre sliced, you wouldn't know it was tongue. Funny--in my grandmother's day, tongue was given away by butchers as worthless offal. Nowadays it can be more expensive per pound than filet mignon.

      That's very true. It has become so expensive. I remember when I could buy a tongue for a little over 3 USD. Where I am from tongue was considered offal for the poorest also. All offal in fact had become quite expensive but I believe that we owe that to the growing popularity of the carnivore and keto diets. Besides the economy doing badly and everything increasing in price anyhow, there is no such thing as a poor man's food anymore as it is all expensive now.

      I love tongue. My mother made it with a sweet sauce when I was a child (mum cooked all types of offal for us kids - we had to eat it all. I’ve now grown into these flavors such as Kidneys for breakfast etc. Fortunately I have a good number of Deli’s locally where I can buy cooked tongue by the Lb. It’s quite pricy as they cook it for sandwiches.

      @@m.theresa1385 My mother made beef kidneys. She soaked them a couple times to take out most of the salt, then, when she served them, they were in a flour water type gravy with parsley. My father and I loved them, but my younger siblings did not. She took that recipe with her to the grave. I haven't found one similar for that or oyster pie, or rabbit pie.

      Yes fresh Rosemary are fresh basil either one would have been great I really have a lot of fun to have a greenhouse and I have plenty of herbs and spices my butterfly gardens in my tropical garden I love gardening Rydell's I don't buy any spices that all I make my own extracts yeah I do it all I sure do that's why I know what I'm getting and it is good

    Dear Chef: To avoid the steaks from having the fat on the steaks curl up and look awful, that fat needs to be slit vertically every 2 or so inches depending upon the length of the steak. The steaks will lay flat on on the plate, and they look better and not all curled up. Just a little something I learned in Food Science classes while in University from our "Meat Chef" several years ago.

    It was interesting that HRH Prince Philip used sirloin steaks. I would have guessed a more expensive cut of beef like a filet mignon, rib eye or at least a nice T-bone.

    I have heard it said that Britain isn't exactly known for their culinary tastes,but that really is not so.Ww have fish and chips,,roasts of various kinds,normally reserved for Sunday's in some parts of the world. Desserts,such as trifles,puddings and some other things.

      I think people that say that may enjoy more robust flavours such as those from the mediterranean and maybe they like more spice. Personally I like both but it seems some of the best british food has some french influence.

    Bring a Philippine Kwek kwek or Tukneneng (Battered boiled egg or quail egg) at the British Royal picnic and see the Royal's reaction. 😆 Tell them we are running out of Scottish egg so we choose these eggs as an alternative.

    Those copper pans in the apple tart section look brand new. No pans look like that for long.

      Mine are cleaned with a mixture of vinegar, salt and flour. You make a loose paste and cover the whole copper exposed, let it sit and then polish with your fingers and the salt grains, then use steel wool to polish the copper

    People would be surprised how much ox tongue ist still eaten to this day...it's simply called "Zunge" in Germany (and I've successfully avoided eating it so far). Another common dish involving parts of the ox is oxtail soup (Ochsenschwanzsuppe) 😖

    I fast forward past the tongue. Ugh. One suggestion. The steaks should have had slits around the edges in the fat to keep the steaks from curly up. Otherwise, a great episode. Thank you

    I have a funny story about tongue. Cow tongue in this case. My dad loves it. He wanted to tease us he took the outer bit the skin I guess you could say and put it in his mouth and then turned around and went BLEEEEAH!!!!! with the skin on his own tongue creeping us out. MY dad he's so funny and silly. But smart. Thanks for this episode!!

    As an American I like to hear what Queen Elizabeth ate. To me Elizabeth represents the whole of the British People. Weirdly, I could care less about any of the other royal family. To me there just freeloaders off the British taxpayer. So i guess what I'm saying is that whoever is King or Queen next is really going to need some good PR for the rest of the world. That Harry guy ain't gonna cut it. Britain may need to look down the line of succession until they find another Elizabeth.

      Laurel leaf, rosemary and I also saw shallots. Olive oil and butter, salt and pepper.
      Edit: it was a thyme branch not rosemary but I think both would be good anyway.

      DidoAeneas123 I think what you were asking was, did they have olive oil in England back then. Yes they did, but it was expensive, as were spices, due to it being imported from such a distance. No problem for the rich, but largely inaccessible for everyone else.

      Years ago, in Canada olive wasn’t readily available. It wasn’t in our grocery stores. You could get a very small bottle at the pharmacy and it was very expensive. It was used, not for cooking but to clean the wax out of your ears. Weird huh.

      I think onion is ok, but, yes, I've seen many docs about them not eating garlic as well. It's about bad breath and having to speak to so many dignitaries, world leaders, etc. Same, I heard about too spicy - in case it upsets tummies when they're abroad.

      Cricket McClure- I BELIEVE THE 'BANNING' of ONIONS & GARLIC IS SOLELY RELATED to QUEEN ELIZABETH'S DISLIKE of BOTH ITEM'S. THUS,--- USING THEM IS "FORBIDDEN,--'ONLY' AT THE TIMES, WHEN THE QUEEN IS PRESENT FOR THE MEALS..

      My guess is the sauce is cooked separately so the Queen doesn't have to eat the garlic or onions. And now I want the same meal because that steak looks great!!! But there is no way I would ever eat tongue. I'd starve first

      @@annmbast3665 I admit I haven't had it for a long time, but, if it was in a sandwich, I promise you, it tastes like rich roast beef. I'm not thrilled the way Paul did it - it should be peeled, the sinew taken off the bottom, and cut the other way.
      And I'm with you on that steak & SAUCE! 😋
