  • Rich chocolate ganache, coffee buttercream, and nutty almond sponge come together in perfect harmony to create this french classic, Opera.
    Almond Jaconde:
    Eggs: 250g or 5 large eggs
    AP flour: 50g or 1/3 cup
    Almond flour: 150g or 1 1/2 cups
    Confection sugar: 110g or 1 cup
    Sugar: 50g or 1/4 cup
    Egg whites: 132g or 4 large egg whites
    Ganache:
    Guanaja: 337g or 2 1/4 cups
    Cream: 282g or 1 cup and 3 tablespoons
    Glucose: 55g or 1/4 cup
    Coffee Buttercream:
    Instant coffee: 12g or 2 tablespoons
    Water: 30g or 2 tablespoons
    Sugar: 201g or 1 cup
    Yolks: 68g or 4 large egg yolks
    Butter: 226g or 2 sticks

    Somehow, we've got to get you out there. These videos are authoritative, accessible, and brilliantly made. The number of subscribers in 2022 does not tell the story of your brand. I made your mille feuille recipe (with the white chocolate pastry cream! I even made my own Pâte Feuilletée Inversée) and it turned out so well that I'm back researching this recipe for my next attempt at French patisserie. Thank you so much for taking the time to make these videos; they really are brilliant.

      Like a milk chocolate? Sure! Whatever you prefer. The recipe would still be the same just substitute it with your favorite chocolate. Goodluck!

    May I ask if the ganache filling and the ganache glaze is the same? Why does the glaze seems shinier? Did you add something to the ganache to make the glaze? The colour also looks less dark as compared to the ganache fillilng.

      Hi Vivian! Yes the ganache on top is the same as the ganache filling in the layers. It just looks shinier because the rest of the cake had chilled and set up in the fridge already 🍫 goodluck! 🙂

      Thank u so much for the clarification. So as per same logic, the glaze colour also appears lighter because it has not yet set? But I always see from many’s opera cake, the glaze seem so shiny and fluid, it resembles a mirror glaze and I actually want that effect so I’m not sure how to achieve that mirror glaze look 🤯

      This ganache recipe will have a subtle sheen when you’re done & ready to dig in but if you want a super shiny mirror glaze check out my “Triple Chocolate Mousse Cake” video that is the shiniest glaze ever!

    I loooooove coffee cakes but this cake is not a suitable choice when you make a dite..
