This takes me back to my childhood. Chicken over charcoal, basted with Open Pit bbq sauce, then left for a few minutes to burn in. I'm going to do this soon. I miss the 80's.

One of my favorite ways to chicken is over night dry brine them in the rub then inject a thin bbq sauce and direct grill them on any of my charcoal grills whether it is my weber 22" or 26" master touch, or my Kamado Joe Big Joe series 3. I also will smoke them on my TMG Volunteer or my YS640. Another way I cook them is with live wood fire on direct heat pit I built. it is similar to a chudbox but has fire grate. The on the pit is 30" from the fire grate on my pit.

I do the corn cobs in husk off direct heat for 1 hour at 300 and then the chicken and corn are about equal. Outstanding!

I've had some success cooking Bradley's 'chud box style' chicken on my Yoder YS640 by removing the diffuser plate, using grill grates to provide a heating and fat vaporization surface and cooking the chicken on the top rack directly over it. I really want a Chud Box style cooker but in the mean time I've had some good results with this. I will try your method this way as well! Thanks for sharing!
Nice man, the 640 is pretty universal. The flavor difference is totally different on a direct cooker so save your penny's. Thanks for watching 👍

Yeah, buddy! I can cook like that with my ugly drum smoker (UDS), too! Your recipes and techniques have never failed me yet, so I'll bet my chicken will be just as good.
Did I ever mention that I used your smoked turkey breast technique for a BBQ contest last year? I didn't win, but the judges loved it! They were looking for more of BBQ creation than just a plate of meat, though.

I need to try that saucing early like that. I did some boneless thighs last week on the Weber kettle. Not direct heat. I used some leftover unused charcoal that had brisket fat drippings on them from the week before and a different sauce. It was the best chicken thighs I'd ever done. I've done the direct heat method but on a smaller grill before and I agree it may be the best way to do chicken.

Delicious! That turned out great! Two weeks ago I made this for my kids for the first time. (direct heat, drum smoker) They loved it, and it really brought back memories of the BBQ chicken of my youth. I have to add it to the meal rotation now that my girls love it so much.

Skin looked real tasty! Does the sauce help crisp it up? In the oven we go 425f. I use the Weber kettle direct heat for chicken, yours looks real good!
Not necessarily but the sauce will help char the chicken a bit 👍
Love the chicken and the Chudd Box. The only thing I would do different is put the sauce on first, rub it in, then apply the spices. It looked like you rubbed all the spices off, or they clumped up in areas. Thats just my 2 cents. Keep up the channel, I love it.

To be called ham, it has to be cured. I have done a whole hog leg and it was good but a little dry. It's in my videos somewhere. 👍

Joe, reduce bbq sauce with what??
Simple syrup. Use 2 1/2 cups of water and 1 cup of sugar. Bring to a boil and let it sit for 15 minutes 👍
So I have a question: My dad used to produce old school BBQ chicken that looks just like yours. You said your uncles used to do the same. Dad started out with a cheap grill and used charcoal briquettes. Then he graduated to a Weber grill. I'll bet your uncles didn't have anything fancy either. Any reason a Chud Box is needed? Or do you just need a good charcoal bed, not too hot, turn frequently, sauce regularly, and serve?
The Chudbox is an old school style cooker that has been used for years. Many bold bbq joints used these cookers before offset smokers became popular. Bbq folks in North and South Carolina still use these types of cookers. You don't need a Chudbox, all you need is a Weber or cheap charcoal grill but using the Chudbox or similar cooker isnso much easier because you have a ton more space between the coals and the food. 👍
@@SmokinJoesPitBBQ BTW, I'm a Chud fan and have watched Brad use the Chud Box frequently. I'm a Kamado Joe/Big Joe user myself. I love live fire cooking. I saw a vid recently that suggested a way to use the KJ expansion grill on top of the standard grill to achieve a similar spacing between coals and grill as the Chud Box. I'll have to try that soon. Nothing like cooking outdoors is there? I'll try your chicken soon. Looks great! I'll pop a cold one and salute my dad who is probably chillin' and grillin' up there somewhere...
