Sometimes better made by me little sour or bitter taste when plain dosa serve..plz suggest how to avoid

Can I use regular rice
After grinding for how many hours do we have to keep the batter to ferment? Can we keep it whole night so that it can be used for making in the morning
@Saba suhel Mulla There is no shortcut for the fermentation process. The external weather has to facilitate the bacterial fermentation process within 8-12 hrs. I live in cold weather and I keep the ground batter in a preheated oven for a humid warm place.

I really wish I could find a good stone grinder here in the US. But then, I’d need the counter space in my kitchen to keep it out, since they are so heavy and bulky. Is there any other method that will grind dal and rice properly? Or am I stuck using jowar and rice flour or buying premade batter from my Indian grocer that I ferment at home?

@Alka Parveen Once the dosa is fermented, transfer it to the refrigerator or to a cool place. It should not ferment further, as it may infuse a sour or bitter taste with a bad smell.
I used chana dal a few times and it made the dosas way too brown. So stopped using. Now I just use idli rice, methi seeds and urad dal.
Channa dal is heavy for elderly. So I use urad, rice and methi seeds and half a cup of cooked rice(leftover) rather than pooha. And it always comes out crispy.
