Looks good. The way it flares up when cooking reminds me of when I am cooking scrambled eggs in the microwave where the outside edge cooks but the middle is still raw and needs a little help :)
I like the ingredients you used and since it’s animal based. However I tried this recipe and noticed it’s more off an egg soufflé than a cheesecake. I think using less eggs and much more cream cheese would be ideal and maybe some sour cream. I use pure maple syrup on the top instead of honey

That would probably work well in muffin pans too. Perhaps it would get a more even golden browning.
