Very nice, Rick. I like to cook and keep the pasta separate. This way it doesn't swell and get mushy with every reheat. I just add pasta to the bowl first, and ladle in the soup ... the broth heats the pasta. Orzo is good in this, too.

There's an old family recipe on my husband's side of the family that includes the instruction to "make regular meatballs" 😂 We have it almost every Thanksgiving and I look forward to it every year - but I'm going to try these much more detailed meatballs to compare!

It looks delicious but my grandmother would never allow painted nails in a bowl, she didn't want nail polish flakes in there so if polished then gloves were needed.

I can't stand it when people pile the ingredients on top of the meat separately then overwork the dough to incorporate it. Pre-mixing the extras avoids overworking the meatball. The same goes for meatloaf. Well done!
Question! Why didn't you use the carrot from the stock in the final product?
The veggies in the stock gave up all the flavor to the stock. In the final soup they would be flavorless as well as too mushy from a long cook time

I had an old (my age, old as in ex job) Italian co-worker that was insistent that wedding soup should not have carrots in it. I don’t understand this because onion, celery and carrots are like the foundation of so many dishes? Is traditional wedding soup made without carrots? I dunno!
I have been ovo-lacto-vegetarian since 13, and pescetarian since about 25 ish, so I have never had Italian Wedding soup. Very confused at the amount of carrots in this dish lol
