INGREDIENTS
2.5 pounds mixed tomatoes, cut into ¾” wedges, or halved if using small or cherry tomatoes
5 sprigs fresh thyme
1/4 cup extra-virgin olive oil
Sea salt and freshly ground black pepper
1 1/2 cups all-purpose flour, plus more for fusting
1/2 cup whole wheat flour
3/4 cup (1½ sticks) chilled unsalted butter, cut into pieces
1 tablespoon apple cider vinegar
1/3 cup ice water
4 ounces firm cheese (such as Gruyere, cheddar, or Gouda), finely grated (about 1½ cups)
2 ounces grated Parmesan
3 garlic cloves, thinly sliced
1 large egg, beaten to blend
2 teaspoons thyme leaves

This is a really great recipe. I made it twice over the last two weeks due to excess tomatoes. Each time, it was great, even when my parmesan to gruyere ratio was off in the second 'leftover tomatoes' galette. Plus, after I made it the first time, making it again made me much more confident. highlight of my week......THE BEST
Made this delicious galette. I did cheat and used a Pillsbury Pie crust. Even better the next day! Reheated on a foil covered pizza screen that had been heated for ten minutes. Then placed the galette pieces on it and heated for less than 10 minutes. It was even better than the day before. Thank you for this delicious recipe!
Now this is the Rick I know. There's some guy with the same name who makes videos for Food Network, but he's a Stepford version of the real Rick.

My God-I randomly found you, lounging cat-like, and then you start showing prowess with the knife, and scraping the sheet pan, but it was instant love and quick sub when you said you wanted to lick that pan-just as I thought it lol!! Will be making this and looking forward to more doll!!

When I make a tomato galette I always make a layer of caramelized onions in between the cheese and tomatoes. I want to mention one other change that might enhance your success if making this, which you should make! When making the pastry add 1 Tbsp. of Oregano (Mexican if possible), 1 tsp. of garlic and onion powder, along with some pepper to Rick's pastry recipe. The savory pastry will complete your final product. Serve at room temp with a side salad and boneless skinless chicken breast for some protein. Or for the vegetarians add some drain chickpeas atop the galette.

This is awesome! I have a huge harvest of heirloom tomatoes I need to do something with. Black Strawberry cherry-type and huge meaty Dixie Golds. Already made dehydrated tomatoes and salsa but the garden is just getting started and I love any kind of galette! Yay ❤

I have an absolute deluge of tomatoes. I might just roast them off and eat them straight out of the oven
Often times I'll see a chef replace some of the water used in the crust with alcohol to inhibit gluten formation. I think I'm going to try making this with some of the water replaced with a tomato infused vodka to amp up the tomato flavor a bit.

Just to clarify: did it bake for about an hour (as suggested at 11:55) or for about fifteen minutes (at 13:00)? That strikes me as a significant difference.
I think he may have said 50? Instead of 15. The longer time makes sense for the double roasting.

Rick has made a lot of sexy food on Sweet Heat, but this was one of the sexiest. When he started scraping the delicious juicy oil into the galette, I swooned. When he said he wanted to lick the tray, I shouted out, "Yes! Do it!"... and then he didn't. sigh. But it looks delicious.

Sorry, love you Rick but I can never make this recipe. Ripe tomatoes would never last long enough around me to make it that far, I'd eat them all long before they got roasted. If I grow them, I eat them right in the garden, maybe one will make it inside. It sounds wonderful, but I'd probably have to have someone make it for me.
