    A lot people is referring to the pan as a wok, a wok is a wok, and a fry pan is a fry pan. I see a fry pan in this video and not a wok.

    That looks really good! I just purchased and wok and was looking for a beef fried rice recipe. The last part of the seasoning I couldn't make out what you said, what was the ingredient after the soy sauce?

      i think it was "dark soy sauce" not sure what dark soy sauce is, she then added sugar, and fish sauce

      azngamefreak46 Thanks for the info. I didn't find 'dark soy sauce' but I did find fish sauce. I followed the technique in the video minus the frozen mixed veggies. I grew up in NYC where the fried rice didn't have green peas and carrots (most times) as a filler. Instead I used napa cabbage, diced onions, and bean sprouts. I also used flank steak. The first time I tried it, my rice was too sticky and didn't brown properly. This was due to three things I did wrong. Firstly, I didn't 'season' my wok properly (condition the metal with oil over heat)
      Second, I didn't allow the steam/heat to escape from my long grain white rice after cooking which resulted in too much moisture and over cooking. Lastly, my wok was not hot enough. The second time I made it, it came out perfect! My wife loved it so much, she asked me to make more the same night. LoL.

      Bean sprouts! Can can find them in the produce section of any supermarket that carried international foods. You can also find them canned on the shelf if you can't find them fresh, which are shelf stable. Fresh bean sprouts go bad quickly.

    @LanierDashanae she used light soy sauce and dark soy sauce, both can be found at any Asian supermarkets. Keep in mind that a little dark soy sauce goes a long way so you don't need much at all. People normally just use it for added color, if you use too much your dish will taste like it lol.. I am not a fan of using a lot of dark soy. One time I used way too much and my fried rice tasted like nothing but dark soy, it's like very condensed soy sauce... Has a diff taste and smell.

    Can I use clam sauce instead of fish sauce?
    Once sprouts are in the rice, how much longer to cook?
    Why use 2 different kind of soya sauce? Can I just use the dark since it's all I have?

      2 till they are cooked to how you like it
      3 dark soya sauce is usually added for the sweetness, flavour and colour
      While light soya sauce is usually the main flavour/saltiness

    you haven't heated up your oil properly, that's why some of your egg stick to the pan. The oil need to boil (it should spread and coat the entire pan with a shiny glaze instead of pooling) for egg. If you're stir-frying, then the oil needs to be even hotter and begins to smoke.

      +Melvin Lopez There's light soy sauce, dark soy sauce, and fish sauce.
      Dark soy sauce is thicker, a bit bitter, and a little bit will give fried rice the distinct brown coloring.
      Fish Sauce is a very salty condiment. A little bit goes a long way. It in itself does not taste good, but in a mix it definitely adds a lot to a dish.

    Why would you clean the wok after cooking the beef? You lose all that good beef flavor.

      Probably because it was raw beef and not completely cooked (yeah, I know, I somtimes do that to get those flavours, but I cook the beef longer to be fair)

      +James Foo mmm ... I don't think so. The beef may not be completely cooked, but the wok itself is hot. It's going to kill any bacteria on its surface anyway. Probably a personal preference from the cook for whatever reason.

      +Jonathan Chen The reason is to keep the flavors clean. The rice isn't supposed to taste like the marinated beef. It's supposed to taste nutty and buttery like rice. If you want to leave the meat juice in it is your choice, but the point of stir fry is to taste each flavor on its own and not just *one dominant* which you would get if you cook the rice in the meat juices.

      +ambervelvet arden plus, yes this dude uses a teflon pan which isn't nearly capable of being hot enough to get a good wok flavour, if you leave in the beef juices the rest of the rice, ingredients will stick to the pan if u actually use a wok. you can't cook non-stick in a wok unless it is clean and covered in oil.

      She said Grapeseed Oil. Its much healthier oil than any oil out there. More healthier than Olive oil. I would make sure it is cold pressed

      You could but only an American would do this. Not at all traditional. But if you need to eat and build a meal and that's all you have you certainly can.
