Chicken Biryani Recipe [Mauritius Style] - Laila's Home Cooking - Episode 35

    Serves: 4-6
    Ingredients:
    1 whole chicken (4lbs) wash clean and cut into big pieces
    4 tbsp of Briyani masala Mauritian style I used Laila's Briyani masala
    2 tbsps of ginger and garlic paste
    Salt to taste
    3 large onions fried
    2 large onions roughly chopped
    200 g of chopped coriander
    100 g of chopped mint
    Few green chilies
    3 cups (about 1 1/4 lbs) basmati rice wash and soak
    250 g of plain yogurt
    2 tbsp of vegetable ghee
    About 2 cups of vegetable oil
    Pinch of saffron dissolves in hot water
    Pinch of yellow food colour
    Preparation
    1) Peeled and wash the potatoes, cut into big chunks and add some yellow food colour and fry for about 5 minutes remove from the oil and set aside.
    2) In a blender add the raw onions, fried onions and a bit of water blend into a paste.
    3) In a large pot of heavy bottom add the chicken, salt, Briyani masala, chopped coriander, chopped mint, green chilies, yogurt, onions paste, ginger and garlic paste mix everything together well add the potatoes and a bit of water mix well and set .
    4) In an different pot bring water to a boil, add cinnamon stick, cumin seeds, and whole cardamom add the rice and boil for about 2 minutes then spread the first layer on top of the chicken mixture.
    5) After another 3 minutes add the second layers and the last layers should be about 90 percent cook sprinkle the leftovers fried onions, a bit of the leftovers oil and the ghee and saffron cover the pot with a tight lid cook on high heat for 5 minutes then reduce the heat to low and cook for about 45 minutes or until done.

    ayooo zis guetter mem p gagne sa bon parfum briyani la. U r so right on the rice quality. Interesting to c the different techniques for our deg briyani. I also do my own spice mix for briyani n kalia. But never done it using the purée onion - mo pou bisin try sa. I also add sliced carrots n peas to mine.
    As u have done beef n chicken can i request a video for the fish version. Merci boucoup🙋‍♀️.

    Hi laila, thanks a lot for the recipe. How much is 3 cups of rice in grms. sommetimes you have 4 cups.My cup is very small. thks a lot

      1 measurement cup of basmati rice is 189. I would say 3 cups is about 1 lb

      I would suggest to marinate the chicken not cook but if you don’t like it this way then fry the chicken for only until chicken catch a bit colour then remove from oil and marinate the same way as video

      You can definitely marinade your chicken over night or for few hours but if you’re in a rush no worries just you still going to get the best Biryani

      Yes you can but just add an extra onions because fish absorbs a lot of moisture/gravy/sauce

      Hi dear I personally like my Briyani in the bottom to get brown colour as is not really burnt but it has a touch of brown colour and as we serve the burning part will be mine and if you don't want yours to burn then just follow the recipe on how much you have to cook it

      Just use turmeric - healthy, delicious and adds as much yellow colour as you could want!
