In this tutorial, I'll show you how to grow and can Brussels sprouts in a hot and humid climate, where growing certain crops can be a challenge. We'll cover everything from starting seeds and caring for the plants to harvesting and preserving the sprouts through canning in a delicious balsamic maple brine.

    Canning Maple Balsamic Brussels Sprouts
    Brine
    2 cups balsamic vinegar
    2 cups white wine vinegar
    2 cups water
    1 cup maple syrup
    Seasoning to each pint jar
    1/4tsp salt
    1/4tsp pickle crisp
    1tbsp lemon juice
    Pinch of pepper, pepper flakes, garlic powder
    2lbs Brussels sprouts packed into 6 pint jars. Pour brine to 1/2 inch head space. Waterbath can for 15 minutes

    I feel like you were reading my mind about seedtime. I was an early subscriber but just don’t have time on the weekends to pull out the laptop to deal with it as i have too much to get done in the garden and yard work. (Then all the other fun stuff like housework, cleaning and more 😫) I wish I could have more time in my day/life!

    I totally didn't time my broccoli & cauliflower plants, I didn't realize the harvest time was so long and it's already getting hot in south Florida...

      If you pressure can, it does require a special pot but not water bath canning which this recipe is. Definitely give it a shot and let me know how it goes 😊

    OMG, Petrina, that's not a brussel sprout @5:45, that's a small cabbage! Wow! Thanks for the recipe. Even if you are not canning, it looks like a good base for all sorts of yummy things, like salad dressing, grilling sauce....with just a little oil of some kind. Or save the pickle juice, cause that is going to be seriously good eats!
    Because of you, my brassica growing plan is stretching into 2025: broccoli (Arcadia, I think you said) for fall 2023, kohlrabi 2024, Jade Cross brussels 2025. You covered all the bases: even for container growers like me (Seven plus gallon pots: check).
    Thanks also for the invite to SeedTime. I am going to love playing with that app, once I get over all this hot weather seed and plant starting. When the weather cools a little next week, I won't feel so behind, but this heat and lack of rain is stressing me and all my plants way out. Gotta run and plant something else!

      Haha! It was a giant, wasn’t it? I already tried the canned sprouts and that brine is amazing. Just like you said, salad dressing, marinade. I simmered it until it was balsamic glaze. Oh my it was good. Let me know what you think of seedtime.

    The sprout roots makes chips
    Thats why the stringray molar was the cover for the deep sea creature that came to eat when the pregnant witch came up

    What measures do you take to control pests like cabbage loopers?

      Planting early in the season definitely helps because the pest pressure is down. I also love to grow a lot of dill around my brassica. It keeps a lot of different bugs away. And Spinosad or BT does wonders if none of that works. Just be careful with it since it can harm pollinators

    Something about that maple syrup and balsamic combination in your brine recipe is really good!
    I think I am with Janice on SeedTime. It could be a function of my small scale container gardening (more probably due to my Boomer attitudes), but I much prefer using printed pages of your planner for my gardening. The timing of the Florida seasons for most vegetables need manual entering, the heat tolerant veggies need manual entering from scratch, and I feel like I was pushed too much sales info on buying the upgrade, seeds, and products in my mailbox. So for a not-ready-for-prime-time product, not worth my time, nor provided useful info, nor held any entertainment value for me.... sorry, just an opinion.

      I understand your point. There is a lot more manual updates we have to make for our FL climate. Also, I would prefer it in app form. Definitely has some more work to do on their side but not bad for them just starting out.
      And I agree completely on the maple syrup/balsamic combination. Too amazing!
