Vardabit
Servings: 2-4
Difficulty: Easy
Prep Time:3 minutes
Cooking Time: 5 minutes
1/2 stale ramadan pide, diced, any stale bread would do great
1 cup tahini,
3/4 cup boiled beans water (aquafaba)
1 tablespoon savoury yoghurt, optional
1 lemon juice
2 tablespoons vinegar
1 teaspoon ground cumin
4 garlic gloves, grated
1 teaspoon salt
600 gr boiled beans, around 2,5 cups
2,5 tablespoon butter or olive oil
1 tablespoon olive oil
A good pinch of red pepper flakes
6-8 sprigs parsley, chopped
- Place 1,5 tablespoon butter in a large pan, add the pide bites in when the butter melted. Heat on low heat until they get brown and crispy.
- Boil the aquafaba in a small saucepan.
- Take 2 tablespoon of the boiled beans in a bowl and mash them. Add the tahini, aquafaba, yogurt, lemon juice, vinegar, salt, cumin, garlic in and mix.
- Add the rest of the beans into the mixture and give it a last mix.
- Place the bread on a dish. Top with the bean mixture.
-Sprinkle the parsley.
- To make the butter sauce, melt 1 tablespoon of butter in a small sauce pan. When butter sizzles, take the pan from the direct heat and slowly shake to form a foamy texture. Add red pepper flakes and shake again, this way pepper wonât burn and give its colour to the butter.
- Finally pour the red butter on top and enjoy!
We're used to make it in Syria on breakfast for ages now. But we add Hummus instead of white beans. It's called Fatte or (Teskie in Damascus). You can find it on menues of every resturant no matter how big or small it is. We prepare it in Ramadan as a side dish on daily basis. It goes alongside chopped vegetables like tomato, green onions, paprika, and pickled vegetables as well. We add ghee instead of butter on the top with some fried pistachew or pine or cashew nuts.
Am totally making this!!!!
Is that a teaspoon? Ah! American Teaspoon đđ€Ł Refika made my day today with this wonderful recipe and also with her jokes đđ„°
This is very similar to Syrian and Lebanese (Fattet Hummos ) we make it with chickpeas instead of beans. We don't add vinegar nor cumin to the sauce. It's very hearty and we have it for breakfast mostly especially Friday morning and in Ramadan to break our fast.
I do a very similar thing with several shortcuts for days I am working on my art and need lunch in a hurry. I make bulk hummus about once a month, and freeze serving amounts in zip-lock bags, and thaw one in hot water while I brown cubes of leftover foccacia (I always have some around). It also goes well with a coarse-chopped salad in vinaigrette which I also seem to always have around, usually with cauliflower and broccoli. Drizzle with pepper oil, and yum! Quick full meal!
I made this recipe Vegan, wow so delicious, I added pine nuts to the butter. My family loved it so much I am making it again tomorrow đ
I made this for breakfast today. I had cooked white beans in the fridge and wanted to prepare something for my husband. I served it along with Turkish eggs. Very yummy, just like everything I learn from you!!
I just came home from work, feeling tired and needing a rest. Sitting down with a cup of hot tea, I saw this lovely video. Just watching you make this delicious-looking treat makes me feel better. Iâm definitely going to have to try making it. Yum!
Oh now I have to go find my favorite Turkish actor's favorite food. I love that you did this. It warms my fangirl heart.
Your attention to detail is impressive. It's clear you take pride in your work as a cook đ€đ€đđ„°đ„°
I love that when you tell us something is easy you really mean it Refika! I am amazed at how such a small number of ingredients and a quick recipe could turn into what looks like a substantial meal. I hope you will continue to be inspired from many interesting sources so you can continue to share lots more of your amazing recipes with us. â€

Refika-and the gang-this looks so insanely good. I will be making this.
Reminds me of fatted hummus, Egyptian recipe with layers of fried pita, hummus and yoghurt. Delicious!
Refika, I watched the video of this recipe that you posted in Turkish. I didnât understand everything, but I watched because I am a big Kivanc fan and I noticed you blushing when mentioning his name! I got such a big kick out of it. I hope he sees your recipe and some day maybe he will make a surprise visit, from what I read, he seems like a very nice guy. â€â€â€
Omg, Turkish Nachos! That looks divine! But I wanted to ask about that beautiful copper butter melting pot and the very clever masher with the curved bottom to get everything in the bowl. Any chance they will ever turn up in Etsy?
