Servings: 6-8
Difficulty: Easy
Prep time: 3 minutes
Cooking time: 15-20 minutes
2 cups red lentils
8 cups water
1 large onion, roughly chopped
2 tablespoons butter
2 tablespoons flour
1 cup chicken stock
1 heaped teaspoon salt
• Rinse the lentils for about two minutes under cold running water to remove any excess dirt and starch.
• Place the lentils and onion in a medium sized pot and fill with the water.
• Boil for 10-15 minutes until it becomes a thick puree.
• Collect the white foam forming on top while boiling. This foam gives the soup a greyish color and makes it harder to digest.
• To make the meyane (roux), melt the butter in a pan and add the flour.
• Cook for a couple of minutes until it smells like roasted nuts and becomes light brown.
• Pour in the chicken stock into the pan and whisk constantly.
• Add the mixture to the soup and season with the salt.
• Lastly, blend the soup with an immersion blender till the texture becomes creamy and smooth.
Your velvety lentil soup is ready and it is such a good base that you can top with many things and turn the soup into an incredible meal. For the classical one, top with red pepper flakes and squeeze some lemon. In Cyprus, it is really common and delicious to add black olives to soup and adding croutons is always a good idea. You can always sprinkle some roasted kadayif instead of croutons. If you want your soup as a main coarse, top with some meatballs, red beans and coriander. For a lighter version, salad, croutons and some sesame seeds would be great! Last but not least, Bahar’s favorite - yogurt, black pepper, red pepper, olives and parsley

Just looking at her videos makes me happy, she's so full of happiness, life and energy and it's contagious 🙏
I know, right? :D And wow, what a great ad for 'tourism Turkey'...all that saturated colour and glorious sunshine and sea. Heavenly.
Agreed
Happy and hungry:)
That’s so right. I completely agree
She is my sunshine for the day.... awesome lady....
I don't know why or who can dislike this lady. She's so sweet, energetic and full of life!😊 And her food is awesome!!
Totally agree with you 🥰🌹
I love how Refika always explains why you should do something - like why to skim the foam.
Canadian here. I love soup and I'll make this tomorrow. I've made so many of your recipes and they are always good. My favourite is the Menemem. I've made it many times and it was one of the last meals my mom had before she died this summer so it makes me remember her.
I love lentil soup but I never add flour to it. To thicken my soup a little, I add 2-3 Tbsp of rice to cook with the lentils and when cooked I blend 1-2 cups of it and then add to the rest of the soup. I also add a little lemon juice as lemon adds another dimension to the soup 🇨🇾Maria
Sorry for your loss😢 God bless her soul🙏
90 % of turkish families eat this plain type with lemon maybe croutons on it,,,, one more additional tip, sauteting washed lentils with sliced onions and oil (plus Diced medium carrot and potato optional) for 3-4 minutes before adding water (Keep an eye Dont Brown the lentils) , Really gives a super taste Just try,,,
true....
Yes I always sauté my veggies first when I make soup.It enhances the flavor of the soup in my opinion.
+1
I also use carrot and potato in my version, as well as add some celery, the white part of one chard, and garnish with the leafy part of the chard once cooking is done before serving.
That’s how I do it
She’s so happy and full of life ❤️✌🏻🙏🏻
What an extraordinary human being. I love your channel...you speak English really well and I'm charmed to see how well you communicate in a second (maybe even third?!) language. You are a big dose of sunshine Refika. Everybody watching you wants to hang out with you, what a gift! ☀🍽
Absolutely
This woman is incredible, I am about to dig out her biography. I love her videos more than any of those Californian vegan Buddha bowls and stuff. She is so likable and human*
This is very similar to daal. Daal chawal (lentil and rice) with achar (oil based pickles) and raita (yogurt salad) is one of the best meals ever. Much love from Pakistan.
that sounds delicious. i have tried to make daal many times but it never tastes like home made. A friend from Pakistan made me some and some biryani and it was *incredible*!
Nothing beats daal chawal for the ultimate comfort meal.
@@caitlinniciomhair9625 The secret to making a good daal is the "tadka" or tempering at the end. Tadka is made in a small pan by adding some spices and curry leaves in hot oil and pouring this to the boiled daal. Some practice and you will get it right.
@@mohabatkhanmalak1161 thank you for the advice! Practice makes perfect and in the meantime, lots of yummy lentils :)
@@mohabatkhanmalak1161 can you give an idea of the spices?
I love, love, love red and yellow lentils. I’m Sicilian, we have so much Greek and Arabic influence in our dishes. When I make this I start with sautéing garlic, onion and red pepper flakes. Then I do the same as you I add tiny meatballs, or toasted almonds or walnuts, pieces of garlicky bread. I have to try the olives! I love you Refika! I pray that this is truly “healing soup” because the world can sure use it. Especially in America. Sending you love and beautiful vibes.❤️
Native Texan here! I found lentil soup recipe in a book at library. I was looking for recipes to feed my 4 children in the 80’s that was cheap! I remember paying 25 cents for 1 pound of lentils!! My children and I loved it and so did my grocery budget!😂
We grew up eating lentil soup. It was a predominant meal in our house hold, especially during lent season. We usually add turmeric, curry, and fried onion. It's delicious!
My girlfriend is not from Turkey (a Quebecoise) but she simply loves Turkish cuisine. So I mentioned your channel and told her that it would be a good first stroke into that endless ocean. Little did I know that she was going to be a huge fan of yours!
Today, while we both were dealing with our own things, she says, "Oh, Rafikah (that's how she pronounces your name) has just dropped a new video about lentil soup!"
Salutations du Saguenay 👋
@@jamest7727 James, you might be shocked to hear that my girlfriend is also from Saguenay!!!
@@reshad8570 Well you probably have a beautiful girlfriend from an incredibly beautiful region. I'm not from here, but I fell in love with the whole Saguenay-Lac-St-Jean region. 😍 Where are you from, and where are you both now?
@@jamest7727 I couldn’t agree more!!! I am from Turkey, and we live in Oxford, UK.
I've made so many of your recipes I think I'm Turkish. Professor Refika, your a excellent instructor. Thank You
:))
Sometimes I think the same too 😂
Made this last night and absolutely loved it! My only regret was cutting the recipe in half. Problem solved... Making more tonight!☺ Thank you so much for all you're doing! I love love love you and your channel! ❤
It's really nice how you re-use the starchy water to feed your tomatoes. Very wise 😊
If you don’t have bread, eat kadayif -Queen Refika
haha!
I had to look up kadayif, but I'm sold.
Yes She is the Queen 👌
@@MelissaThompson432 I believe they call it “angel hair” in English 😇
@@ebrusunver I've never heard of it before this, but I'm going to look into it.
I have never made (or even tasted) lentil soup, but I have had a bag of yellow lentil in my pantry for some time. Today is the day!
I love lentils. They have a very slightly peppery, meaty bean flavor.
lentil soup is my comfort food, after cream of mushroom, every rest stop in Turkey I can find a bowl, so good
You would love it my friend. Especially red lentils are the best in taste so you won’t regret in purchasing lentils ❤️
Dear MWC, there is a world of lentil soups out there, I wish you the best with discovering them, and I love Turkish lentil soup. It's unbelievable how versatile lentils are and it is amazing how many different types one can buy nowadays. Or at least where I live 😊. Even my regular supermarkets have a larger variety, not only the foodie speciality shop where I first saw them.
On Refika's recipe, which I will definitely try with every of her suggested toppings: My Turkish friend Yildiz adds one or two potatoes to the soup which boils together with the lentils, not roux; and she does not add an onion. But then I guess that there are as many ways to cook Turkish mercimek corbasi as there are Turkish families or lovers of Turkish cuisine. I won't even start talking about all the other cuisines which offer lentil soups 🤤 I would like to recommend Andong from "My name is Andong" here on CZcams; he presents a Turkish lentil soup as served in Berlin, as another example.
All the best!
How did it turn out?
So, I love that we get a cooking lesson, a history lesson and a comedy show all wrapped into one!! ✌🤗
EVERYBODY loves refika! it's like a miracle - you make people happy, you bring them together and make them feel like .. we're all the same. lot's of love and all the best for you and your team!!
The combo of Swedish meatballs and lentil soup makes this Swedish-Turkish person smile. Lentil soup has been my comfort food in 2020 and all the toppings are inspiring
I absolutely love this channel. I beige watch since I discovered it. Love you!!! Am from Malawi, Africa ❤️
💖
For me: a lot of limon suyu and kuru nane. When i have time, İ make the "Deluxe" version, called "ezogelin". Turkish lentil soup: wintertime best friend! The "yayla çorbası" is also one of my family's favorite. Bütün ekipe selamlar!
How sweet can any human possibly be
Refika: Yes
The way bahar put corrections in the subtitles with smile, makes me wanna believe in true friendship💓
You must have read my mind, nothing is better than turkish lentil soup on a cold day! And now I can make it myself.Thank you!
We love to start the day with Refika and Bahar, sitting on the bed, with our cat, Pablo. Today, as a Sunday treat, we watched two videos, this one and the karnabahar İskenderun kebabı one. And we had lahmajun for our evening meal yesterday! We love you guys, both your food, and your enthusiasm, and your philosophy of the world!
i hope pablo also enyojs that delicious dishes😊especially kebabs
My geriatri-cat, Bruno, and I love these videos as well. I am vegetarian, but Bruno humors me and always has a little taste of beans or lentils. He loved these, and so do I!
Peace to all!
I’m Lebanese and we add sautéed onion and little rice ( for thickening ) at the end. The stock is added after the starch is scooped from the boiling lentils.
We make something similar in Trinidad called Dhal. We add roasted cumin and sometimes fried split peas balls and call it Karhi.
I’m making this today! Thank you, Refika, I love your channel. Turkish cuisine is amazing. Big hugs from Colombia 💖
I made this soup today and it was the most wonderful and comforting meal I could've wished for. Thank you for sharing :)
I love how we aren't just getting recipes here but valuable language lessons from the added words here and there.
Thank you Refika and Bahar.
Friends for life!
Howdy from Texas amiga!!! So good so see ya again!!! Thank you! God's blessings and keep my nation in your prayers! Hasta la vista!
Love lentil soup! Even in Scotland you have this soup. My mother brought us up with this. Now living in Sweden, I still do it! However, loved seeing the variety of extras you put in! Thank you for your ideas and thank you for sharing them with us. You're such fun to watch! 🤗❤
Yes! Lentils with a ham bone cooking in the pot 😋
Well, this video was a year ago almost but I just found it. I look forward to making the soup that saves the world! I agree with everyone below how energetic, fun you are --- love what we learn from you about Turkey and the amazing cuisine!
I love this video, I am a writer, and when one of my characters was feeling down, she made your lentil soup. Thank you... for everything.
Your town looks so much like mine, the San Francisco Bay Area. With the bridges, hills and water. We have a similar climate, as well.
I'll make your delicious lentil soup recipe and raise a spoon to you from our ersatz Istanbul 🥰
Here's hoping to visit in person in the new year.
İ can recognize this part of Istanbul called Kuzguncuk, north of Üsküdar. Unfortunately İstanbul is not so green, but if you go northbound along the Bosphorus, you find nice green places like that.
Refika's "town" is a huge city which sits on Asia & Europe, no other city in the world has this unique geography
Super!
That's what I first thought. Is that San Francisco? Wait, no. Beautiful, though.
Honestly, as someone who grew up in Istanbul, when I first visited the bay area, specifically berkeley and SF, I honestly thought this is my second hometown in the world, I could live here and not miss Istanbul as much, cause they have a lot of similarities
I am intrigued by your cooking, and I grow more interested in your culture every time I watch your channel. Thank you for all if the information you pack into your videos! This is a dish I have to make 😋
İ love your 'no wastes' ideas about using the used water for the garden and not wasting the left over lentils in your bowl!
This soup will save the world. It's so easy to make, even with the meatballs, and so good. My autistic daughter who is a super fussy eater loved it! We all did. I'm in love with your channel, your enthusiasm and your positive energy. Thank you.
When I was in Turkey in 2011 I ate this constantly. Soooo good!
me too, everywhere in Turkey I went, i looked for lentil soup
Turkish lentil soup..delicious, heart- and soulwarming.. Highly recommended and absolutly flu- approved! 👍🏽😁
You are the happy corner!!!!! You are the main ingredient. You make so many people happy . " Smile and the world will smile because of u"... thats for u.
This is fantastic. My daughter can't have tomatoes and I've been struggling to find a lentil soup recipe without tomatoes, and this idea of simple soup with garnish is so great I am surprised I haven't tried it sooner. Thank you.
I subscribed both your Turkish and the English channel. They’re both phenomenal. I made so many of your recipes yet none of them fail even once! I can say you’re really loyal to the Authentic Turkish recipes, ingredients with the twist of modern Refika’s touch. Maybe that’s why your recipes are never boring. Your dynamic personality reflects to your cooking. Makes them so colorful. Brings so many flavors together and brings them to the life. So so happy and feel lucky to have you in the community of cooking. There are alot to learn from you and I anxiously looking forward to it! Thank you!!
It’s delicious, I put olives on top with red chilli flakes and crunched up toasted pita bread. 🤤
It will be a good idea to add kale , spinach or radish leaves 10 minutes bofore the soup is fully cooked to make it more nutritious
Tesekkurler
Just made it for the first time. Easy and delicious! Maybe a bit less salt next time. Simply served with a sprinkle of smoked paprika. Love this new family favourite - thanks!
This is now my go to soup for all these frigid Canadian winter days we’ve been getting. So far my favourite way is with lemon, red pepper and crispy onions! But there’s many more options to try. Thank you for sharing with us Refika!
LENTEJAS! Same here! I grew up on lentil soup made by my mother from Spain. Great source of iron and a cozy meal that happens to be a health food you can feel good about. Simple and super tasty on a budget. P:
I just love how sincere and refreshing the comments are, tried the soup so many times...it is the best
Made this recipe today! My husband (Swedish) loves it!!! It tastes exactly as the ones they serve in Turkish restaurants in Turkey. Thank you! 🤍🤍
i just love your videos Refika! You have fun sharing your cultural dishes and I want to try them all. When COVID is irradicated Im coming for a visit! But first I'm trying this soup!
Yesterday we had the last bit of Döner from your easy recipe! It is our favorite! ❤️ you and the team!
These ideas of improving or actually elevating the taste of the lentil soup are simply amazing...I would never thought of adding olives on top or salad...wow. love from Romania 🇷🇴 ❤ 💕
There's a kebab shop near my home that makes this soup and i just love it. I've searched the internet for recipes but i never seem to get it right. This is the closest I've ever come! Thank you for sharing it! I had no idea it was so simple. The only thing i added was dried mint, because they do too. It's such a comforting soup!
This looks a lot like what we call 'masoor dal' in India. There is also a "whole" lentil version which is brown - basically the husk is not removed and it is more nutitious - you can make really hearty stews and thick soups with it, perfect for winter!
I died at the Silence of the Lambs bit! Lmao ❤Refika! ❤Bahar!
Refika, I made it today and can I just send you a kiss 😘 I substituted vegetable stock instead of chicken and it came out perfectly.
I will be making it again. It was such a bowl of comfort food and thank you for introducing us to it.
This is my favorite "recipe from the internet" ever. The basic soup is so simple I'll make it even when I don't feel like cooking, and as shown in the video, you can adapt it to whatever meal you're wanting at a given moment. I love the olive/lemon/allepo pepper but also often add some tomato, diced pickle, leftover poultry, croutons, rice, herbs and spices. It's all good. Thank you Refiks'a Kitchen for posting this and all your other great videos!
I live in the state of Washington in America and love Lentil Soup but never made it myself until yesterday using this recipe. It was delicious plain and I would have enjoyed it that way until gone, but having all of the topping suggestions was wonderful. I never would have thought to add olives or any of the other ones. I only had a avocado and Kalmata olives at the time so they went in with some cayenne pepper and crunchy onions used on salads. Wonderful! Can’t wait to try some of the other ones. Just love watching the videos and seeing how much everyone enjoys making them.
Video starts......Refika is singing and dancing........I immediately LIKE 👍!!! 💜😘
You're a pretty lady grown but were such a cutie pie kiddo! I literally just found red organic lentils at Aldi. 😌
This soup is not only the easiest to make, but also an extremely satisfying one. I recommend to top yours with some chili oil and a dollop of yogurt - it's a game changer!
I rediscovered the wonder of lentil soup from a soup mix! Now I have a jar of lentils so I can make my own. I love a thick soup and especially one that can handle all kinds of additions. Thank you for posting your recipe - I can't wait to try!
Oh my mom loves lentil opposite for me,now because of you i can give it another try. Thank you ,bless you. End of quarantine buffalo,ny. USA 🇺🇸 🌎
I made this soup couple of days ago, and me and my boyfriend LOVED it so much, I'm gonna make it tomorrow for friends!! 🥰 Thank you Refika for the great recipes, they are really easy to follow and understand. ❤️
Can you make other vegetarian recipes? I don't have any suggestion, I believe that anything you'd do will taste great 🥰
Used her recipe many times since she posted it. Absolutely delicious.
Hey Refika, thanks to you I learned so many similarities between Indian and Turkish cuisine. Shows how the cultures are connected and the world is just a big family.
Looks delicious, love the toppings ideas especially the little meatballs. I make a vegetable lentil soup (green/French lentils) in the winter with potatoes, carrots and sometimes also spinach. It makes it more filling. I also do one that is curried lentil (orange or yellow lentils) with pieces of roasted sweet potato (you could use pumpkin) and kale or spinach.
Meatballs. You could have been born as another creature? Get some empathy
I revisited this video to say that I will make the soup because it's been replaying in my head! Also, Refika's suggestion to scoop the hot soup from the cusp of the bowl is something I've recently adapted while feeding my baby his pureed baby food! Thank you. Big love from Switzerland
After 35 years in and out of Turkey as a carpet dealer , this lentil soap was my favorite breakfast food , or lunch too !
despite being Turkish, at home my siblings and parents always mock me about the way I eat soup, but when I watch this video and notice that we have common ways to eat soup I became proud of myself. thank you refika, such a great and inspiring vid ♥
That intro was life in itself!
awesome video, ill definitely be making this with oil and veggie stock to make it vegan. The lemon on the side is such a great idea and also helps with nutrition because the vitamin c from the lemon helps your body absorb the iron from the lentils. Much love from Queens NY!
Taste of soup fades away when i eat with lemon for me but i can have lemon right after the soup :)
This is also Cooked in Lebanon! It’s true all kids and adults like it and very healthy! We put cumin - a lot of cumin and lemon. Try it with fried kibbeh.
I’ve recently had surgery, made this soup for the nutrition, but I’ll always make it for the comforting taste and warming flavor. Love your channel. I hope to visit your city some day after the pandemic 🙏💐 Charlene CT USA
In my family we are used to making it with paper paste and I've always asked why in turkey it is so plain and so delicious. We will definately try it this way. (For best results take some sucuk with the soup like mezze) Greetings from Bulgaria. Love you.
I am turkish and my family cooks this with pepper or tomato paste as well😂
Some families add some pepper or tomato paste in Turkey too. Because it deepens the orange color and adds nutrition, my mom adds a carrot in it as well.
I think I have lentils in the cabinet! I’m off to make soup that will save the world! Thank you, Refika. You’re bringing a lot of joy and deliciousness and comfort to me in a time that’s been a dark night of the soul.
This is now my favourite soup too! I made it today and it is comforting like chicken noodle, stick to your ribs like chowder and in the -29 degrees celcius Saskatchewan weather It's the hug you need. So good! ❤
Dear Refika, I am an English teacher and sometimes I use your videos in my classes and the kids loved them! 😍😍😍
Allah razi olsun sizden!
Amazing! I hope you realize you are bringing knowledge through cultures and you explain it so well! You might be on to bringing world peace through your educational classes!
Mmm. I just made this and I’m in heaven. ❤️
I've cooked with lentils for years and still learned so much from this video! You always put a smile on our faces =)
my noni used to make this for me as a child. She is 82 now I think I will try to make some for her and my mother. I seriously havent had lentil soup for decades.
I just made this soup. Really easy and super delicius! Thank you Refika for being so great at everything. You are an inspiration to me not only with the great cooking but also with your attitude towards life and nature. Next sunday I'm making something else from your videos. Looking forward to it!
Sooo happy Marina.. hope the soup becomes one of your classics.. and I am curious what you are gonna choose to make for next week lots and lots of love 😘
@@Refika I made Susamli Patates Koftesi, from your webside (long live google translate :)). It was so good again although I didn't fry them but baked them in the oven instead, so that the little one can eat it too. I'm sure that fried are even better! Next weekend will be Pide :)
I love your recipes! Much love from switzerland ♥️🇨🇭
I was having dinner while watching this video and my dinner menu included Turkish style lentil soup. For croutons, I used left over pizza crust. I also like to top off my lentil soup with some sliced ginger, chili flakes, sumac and obviously lemon :)
I think it would be good with little squares of leftover pizza in it.
This video reminds me of a time I had a lady from Jerusalem staying with me I met at church. For our first meal together, she taught me how to make a soup very similar to this. As we sat at my table, we broke bread together eating that delicious soup that I still make on occasions . I haven't spoken to my friend in over 25 years. I pray she is doing well.❣
This was one of the first dishes I was introduced to in Turkey. Love it!
Thank you for another easily veganized dish. I love lentil soup! Though I have to admit I’ve never heard of using a roux in it or adding toppings. I’m going to make it today. I’m thinking of having it with some fava beans and a nice Chianti 😉 I love your humor. Be well!
*writes pirt down so I never forget it* 😂😂 I love these turkish lessons!
One of the best cooking channels that I came across so far! This dish is super tasty, not only Turkish people but whoever taste it will love it. Lots of love from Germany!!!
Love everything you cook in this beautiful kitchen!!! ❤️
Love all the small tips here and there!!
Perfect for this cold day in Alaska
and i thought all day long.. what the people do in alaska now, because i am from vienna and it snowed so much here today and i felt, i am like in alaska😄 by the way i was never been there 😅
Still re-watching this one. I have so many food intolerances.. This soup saved my world.
Love your videos. I've just discovered your channel but have already made green olive salad, lahmacun, red pepper bread, tahini tarator, and meatballs. Your videos are so helpful and fun. The kitchen smells amazing every time and my wife loves the food. I've been to Turkey 3 times and love the food so much. The problem has been finding a good Turkish restaurant outside Turkey. So that obviously means I have to do the cooking myself. I LOVE eating mezze-style. Please post lots of mezze dishes. We've eaten so many delicious foods in Turkey. :-)
Mmmmmhhhhh, YUMMY!!!
I LOVE lentin soup anyway, and this is completely different to the traditional german lentil soup.
Will copy your variation next week!
Greetings from Berlin!
It's wonderful to see a bit of the culture through food. Your recipes are amazing and I'll be trying them once I muster up enough courage to cook again.
I just made this. So easy (the roux makes it so creamy). So delicious. Greetings from Hong Kong!
Is 3:50am and i am regretting the fact that I haven't found this channel faster. Your cooking skills, your tips, your energy and imagination... Are a shock to me. I am one of the lentil soup fans. But until this... I found nothing loke it. I do lentils soup like weekly basic. I do not have words to describe the happiness I'm feeling for discovering you. I send you a big hug and a a huge thank you! You are a goddesses.
