  • We are making FRITTERS which ease eating vegetables for some people in this episode. There are so many recipes with tomatoes, cabbage and lettuce around the world; in Turkey, we’re famous for our zucchini fritters whose recipe we have on the channel. I would like to introduce you to a delicious and traditional type of fritters called Öcce which is made of fresh greens. This recipe is from Gaziantep, one of the regions that we had the earthquake; I want to honor this beautiful city with this recipe. I made use of parsley, mint, spring onions and green garlic as it is in the original recipe but you can feel free to use any greens of the season that appeal to you. It’s also my pleasure to share the mathematics behind making fritters so that you could make use of this formula to make fritters of whatever you have in your fridge.

    ÖCCE - Veggie Fritters
    Servings: 4-6
    Difficulty: EasyPrep time: 5 minutes
    Cooking time: 5 minutes
    · 1 bunch of parsley, 100 g
    · 6-7 sprigs of green onion
    · 5-6 sprigs of mint
    · 3-4 sprig of green garlic or 3 garlic cloves
    · ½ teaspoon salt
    · ½ teaspoon red pepper flakes
    · ½ teaspoon cumin powder
    · ½ teaspoon dry coriander seeds, crushed
    · 1 pinch of black pepper
    · 2 eggs
    · 2-3 tablespoons all-purpose flour
    · Any oil for frying, preferably olive oil or hazelnut oil
    - Place all greens in a food processor and pulse until shredded into small pieces. Be careful to not get them pureed.
    - Take the greens into a large bowl. Add salt and rub.
    - After squeezing their excess water add black pepper, cumin, coriander, and red pepper flakes, eggs and flour. Mix until well combined.
    - Heat oil in a large frying pan. Use two spoons to give the shape to the fritter. Before using them, dip into the oil so mixture doesn’t stick to the spoons.
    - When the oil is heated, start frying the beautiful Öcces until brown and crispy. Don’t forget to flip them halfway! Enjoy with your loved ones.
    Serving tips: You can serve with some garlic yoghurt sauce and butter sauce, or labneh and chili jam or sweet chili sauce.
    For Garlic Yoghurt Sauce
    6-8 tablespoons strained yoghurt
    2 large cloves of garlic
    1 pinch of salt
    1 pinch of black pepper
    For Butter Sauce
    1 tablespoons butter
    2 pinches red pepper flakes
    Dry mint, for topping
    Sumac, for topping
    Additional:
    - You can add any kind of cheese, smoked ham or minced meat inside the fritter mixture.
    - If you want to cook in Air-Fryer, place a baking paper, spray some oil and fry öcces in 200 °C (392 °F) for 8-10 minutes. Don't forget to turn it halfway through.

    Hi Refika, we used to do this recipe in Egypt with name of "Egge", but we add Soda Bicarbonate, extra eggs and bake it in the oven, some people add small amount of cooked rice in it. It is a great recipe can be done any time :)

      I confirm what Ibrahim said above.
      The name 'Egge عجة starts with a consonant that does not exist in Turkish. It is in Semitic languages (e.g. Arabic, ...) and is the first consonant in the original name of Antep عينتاب too.
      It is always done with eggs and any vegetables (spinach, onions, green onions, parsley, ...)
      So it is more like an egg frittata than a fritter.
      There are also very similar Syrian versions (Ejjeh).

    Eating a plate of these now! I am out of eggs and used chickpea flour instead, they turned out so good took ten min even with hand-chopping and saved all the herbs in the fridge.

    Green garlic is the flavour of spring from my childhood. My dad used to make spring salad with fresh radishes, lettice and lots of spring onion and garlic, lots of herbs and hardboiled eggs, it was like spring on your plate flagrant, tender and fresh. Come the end of Winter your soul craves fresh green flavours. In UK they don't sell spring garlic, but I grow mine in a container on my balcony. Just plant unpeeled cloves of garlic and watch them grow, 😋

    We make a similar thing called sokhov mokhov dapag, which means fried onions with an extra rhyming word for fun, but it’s made with chopped parsley and scallions and sometimes mint, with just enough egg to hold it together, pan fried like small flat pancakes 5-8 cm in diameter. It’s one of my son’s favourite foods!

      I am confused Kuku Sabzi (کوکو سبزی ) - I love it but it is basically a herbs omelette and not similar to köfte at all?
      But there are wonderful persian meatballs as well, for example Kofteh Tabrizi ( کوفته تبریزی ) which also contain walnuts and barberry and dried fruit! Very yummy!

    Oh my goodness!!! Refika, this your recipe came up at the right time 😅😅. My husband and I were asked to eat certain green veges for health reasons. We were given list of what to eat and I have the impression that he bought all the vegetables in the supermarket that I don't have space to store all of these stuffs. There is this big round ball like vegetable they call "chou frisé". I have precisely 7 of them and so confused 🙄 on how to store or cook them. I only know of soup recipes with this particular vegetable. Your today recipe came in at the right time 👍. I just hope that it will turn out good using your recipe with this green " chou frisé " 😅.     Sometimes I find it difficult to pull past season plants to make room for the next season.
    This year (for the first time ever) I had a ridiculous amount of parsley. I didn’t want to send it to the compost bin but I couldn’t imagine how to use it while it remained fresh (too busy right now to dehydrate and save).

    In Tunisia,there are loads of names of dishes that come from turkish, today I learn a new one❤❤❤, so here s a small list:
    Brik, obviously Börek but different, a special filo sheet shaped into a square stuffed with tuna egg parsley closed like a triabgle and fried.
    LABLEBI, street food chickpeas soup with stale bread harissa and granishes, it is an evolution of an ottoman army dish.
    KAFTEJI, a street food favorite too, a mixture of fried potato, tomato, hot pepper with or without pumkin, it used to be served as a side dish in köfteci (kofte shops)
    Now Ojja (in arabic, it is written the same way as OCCA in osmanli turkish with the first letter ع becoming silent in latin script ), tunisian Ojja is basically a Menemen with more ingredients. The turkish Occa is called kefta in Tunisia.
    The Tunisian Beys (Ottoman rulers) were not the ones responsible for the spread of turkish culinary delicacies, hence the abscence of royal dishes. They rather ate Italian and Berber inspired meals, the turkish influence is more evident on street food and it was explained by some historians by the presence of military personnel on long term deployment in Tunisia during the Spanish reconquista.

    V make similar in india using fenugreek greens dill greens local amaranth greens indian bathua greens chicken flour spices green chillies etc n steam or fry very lively delicious

    İn lebanon we have a very similar dish called ija, in turkish it would be read as icca

    I love so many things about your channel, but this video is a classic example of something I don’t find with other many other channels, and that’s all the other ideas it gives me. Zucchini fritters are a relatively common thing in Australia, as are potato and corn ones, but fritters from herbs look and sound amazing, and I’d never even heard of tomato or lettuce fritters?! Normally I make (and love!) your recipes, but this video is going to send me searching for so many new things to make and try, and I love that :)
    Thankyou again for all you do :)
    PS I keep meaning to send you photos of stuff I’ve made, but I usually end up finishing the whole thing before I get the photo 😅
