    So kuzumochi is often made from kudzu starch but this appears to be the variant made around Tokyo from leftover wheat starch.
    Its normally served chilled and topped with kinako ( toasted soybean powder ) that tastes a lot like peanut butter and black syrup.

    Crazy to see videos like this where everything is sterile and meticulously done. The Indian factory and cooking videos look much different.

      Not sure about sterility. When they took out the layers after steaming, they transferred them to wooden grates in iron frames, and it is clearly visible that the wood had turned black from moisture. It’s not sterile at all, it’s more like blind adherence to tradition and resistance to the technological approach.
      Also using fabric for baking... there are many modern materials that will be more durable and reliable.

      the product passes through a modern production line before it reaches that step... wet wood will rapidly release water until its in equilibrium with the surrounding environment, at which point it is naturally resistant to bacterial spread because of low surface moisture - meaning that the wood slats the product is resting on will more effectively resist bacterial formation during the cooling process, when plastic or metal would mean that you would have considerably MORE bacterial contamination vastly exacerbated by the standing moisture on the hard surfaces. why do you think dry wood doesn't rot? also the staining means very little, that's tannins leaching.
      and fabric is a perfectly decent material to use here - it's easy to clean, porous, and reusable. no other material would be as appropriate.
      really, resistance to the technological approach?

    It's undoubtedly very good, given that the Japanese enjoy this delicacy, but as far as I'm concerned I couldn't eat it, for one thing I didn't see any sugar or any sweetening element during preparation, but above all this gelatinous aspect is totally prohibitive for me, I deplore it, believe it or not, because I'm missing out on products that are probably very good, but this aspect means that I couldn't possibly put them in my mouth just by looking at them. 😢

    Ткань влажную укладывает в формы голыми руками, заправляя кончиками пальцев, и оставляя в уголках свой биоматериал и грязь из под ногтей.
    Получается, что самый вкусный и наиболее долго хранящийся это - центральный кусочек, каждый девятый , после нарезки пласта.

      This is different - the New Years' treat is made from cooked rice that is pounded in a big mortar and pestle, or industrial equivalent.
