  • Shirataki noodles have zero calories and are touted as "miracle' noodles. Since regular pasta has no place in a low carb or keto diet, shirataki noodles are certainly intriguing. In this video, I explain what shirataki noodles are, how they can have 5 grams of carbohydrates yet no calories, as well as some insights into how to prepare them and what they taste like.

    We have a product in Canada called Nupasta, which is made from the Konjac root. It comes already precooked, which eliminates the boiling process. All that needs to be done is rinse,drain and cook in a pan with desired sauce, and protein if you wish. Although it has 25 calories per serving, I can live with that. 6 grams of carbs, and 6 grams of Fibre!! Texture is aldente, same as regular pasta. Excellent for pasta lovers. It fly's off the shelves!!

    I use cabbage as pasta if I am cooking for the family. If I have a hankering for pasta, Shiritaki noodles does the trick. As you said they are flavourless ...so I hit the noodles with a full on sauce of peanut butter, soy sauce, hot sauce, sesame seed oil and a bit of chicken stock. Garnish with cilantro. I never measure so feel free to play. But this combination of ingredients satisfies my pasta cravings, as does the cabbage. My family loves cabbage as speghetti noodles. Yummers. I am on the final day of a 6.5 day fast.

    I love these noodles. Rinse & cook! We use to make Pad Thai, stir fries, soups & homemade sauces. We sometimes use spaghetti squash or zoodle-zucchini noodles for italian/Mediterranean dishes, and rice(fine chop steamed cauliflower for rice dishes.     Love the way you explained this. The smell may be a bit off-putting, but once they are rinsed we find them to be a good option.

    I love these noodles! I rinse well, squeeze dry with paper towels, and then saute in butter to further dry them out. This gives them a wonderful taste. They are my go-to for spaghetti and chicken Alfredo.

    Tried them this past weekend. I could see them working nicely in a keto chupchay - the Korean mungbean noodle dish. These would be perfect for that.

    Thanks for the information, very helpful. I’ve been using Nasoya brand pastas for a little over a year that I get from Walmart. You said they don’t have a taste, but these have a taste that is similar to corn. At least to my pallet. I have cooked them with Italian sausage and red meat sauce, shrimp and white garlic cream sauce and other ways. I love these noodles.

    I use these all the time. Some can't get past the smell when you open the package but if you rinse, they are fine. What I do to get the water out is, put the noodles in a strainer and then pour then on top of a paper towel. When I heat them, I put them in frying pan and that seems to do the trick to get that little extra water out. I love these noodles with sauce or in soup.

    Love these noodles in Asian flavored dishes/soups. I also use a shirataki & rice in a 50/50 mix so I can have rice texture/flavor. It was a good way for me to transition off of rice. Another option for low carb noodles would be seaweed noodles.
    I use veggies in Italian flavored dishes. The veggies hold sauce really well.

    They're not really like pasta, but they are an excellent replacement for rice noodles. I seem to be one of the lucky people who can't detect the stinky odor when they are first opened that a lot of people complain about. I was really worried about that the first time I opened a package and was very pleasantly surprised that there was nothing yucky or unpleasant smelling. They're easy to prepare, even though it's a multi step process, and they do suck up the flavors of the dishes I've prepared (chicken chow mien and pancit).

    I use shirataki noodles, kelp noodles, and zoodles quite regularly. I've also used some tofu noodles, which have a few carbs. The ones that have carbs I'm more likely to eat with lean protein after resistance training when I'm avoiding fat on purpose (then my next meal is regular keto.) The shirataki and kelp noodles are great where you wouldn't otherwise make a dish because it would require noodles.
    While the shiritaki noodles tend to resemble more typical flour or rice noodles, kelp noodles (one may wish to look for "sea tangle noodles") are more like the "glass noodles" served in some Asian dishes. In order to prep those, one softens them with lemon juice then rinses it out. I used to really miss glass noodles, so I've enjoyed them several times.

    they can be made to be part of a tasty keto dish. When i have "room" for some lower glycemic carbs I eat them with spaghetti sauce, marinara, etc. Will try them as a ramen type thing too. As a T1 diab there are no real good analogs for wheat pasta, but the noodles have other benefits and are a B- C+ for me...

    Thank you Dr. Becky. I use these often but have learned not to follow the directions on the product. Warm water rinse, rinse, rinse while rubbing together in a colander at least 2 full minutes. Then I add course salt rub together, let sit a couple of minutes and then rinse again. I then dry between paper towels. Dry the rest of the way in a dry, hot, non-stick frying pan, with no prior boiling needed. When they are dry they have a squeaky rubber sound. Weird, but true. Remove from heat and add sauce. I use mostly with Alfredo sauce and have come to enjoy them. I feel full for a very long time and use them for my late breakfast and have no hunger until MUCH later in the evening when I am ready for the evening meal. Great for shrimp scampi too! 🥰 I use Vitacost brand. $1.50 a bag.

    Just make sure to rinse the noodles...even the bags say not to use the water in the bag. But after a while you get used to the taste. They're great in ramen, pho, and other noodle soup dishes. I've used them as mac and cheese substitutes...it works, but not as well as regular macaroni...but you get used to it. Still love the noodles though.

    Hmmm, I tried to add a comment earlier but perhaps it was blocked because I put a link in to something? I will try again without the link. My husband and I have enjoyed Shirataki noodles many times in many dishes. We also really like the Tofu Shirataki noodles (same brand: House Foods) that have just a few calories and carbs. They are more opaque and more similar to regular pasta than the plain Shirataki. We also really enjoy kelp noodles (we have used the SeaTangle brand) which have a very nice texture. These kinds of noodles we find to be a bit better than zucchini noodles in providing a nice canvas for sauces.

    I heat this up with a 10 calorie can of chicken broth. This fills me up quick and allows me to feel as if a ate a full dinner when in reality I just filled up on 20 calories or less.

      Oh, and by the way I add a ton of salt and pepper so I don't taste the noodle that much. They are basically taste like rubber bands otherwise.

    I have used these in the past on very low carb diets, mostly in stir frys, but I have now found that I prefer just having more veggies! As a substitute for pasta, they may be more similar to wheat pasta, but surely using spaghetti squash, zucchini or other spiralised veggies is better for you as you have the vitamins and minerals in the veggies?

    Doc I look at my test results and I can see my thyroid low so i just bought levothyroxine a I took it two days now I even feel more energy in the short period of time but puff face so I’m not gonna take it I’m gonna supplement with iodine will I get any problems not taking the levothyroxtine it’s only been two days

    I have been looking up down left right for the actual carb I should count for these noodles as I eat an enormous amount a day.
    So… should we count those net carb ??? If so I have like extra 30g carbs a day, which will kick me out of ketosis 😢

    I'm a brontosaurus. All I eat is fresh leafy greens and I exercise daily. I've tried the keto stuff but I can't open the packages. I'm not trying to be skinny, I just want to be able to fit into my jeans from the 70s. Help.

    I would def not eat one pack in one go. Not because of the carbs but it's too much for the stomach to handle. Also I'm not sure if this helps or hurts but I cut up the noodles to smaller pieces.

    I can't get past the texture of these 'noodles'. I am a self-proclaimed pasta-holic. Sadly I've probably eaten more pasta in my life that an elderly Italian and just LOVE the texture/taste and mouth feel of real pasta. Wish so badly I could eat these shirataki. Maybe in the future they will perfect them.

    Hello…. So, I tried the keto diet, and was told by the doctor that this diet wasn’t a good thing for me. I have been diagnose with a fatty liver, and pre diabetic….. could you please help me. 🙏🏾

      @@ursulawilliams2371 I was prediabetic with multiple autoimmune and chronic disorders. I went keto and lost 80 lbs in a year and dropped my A1c to normal. I've stopped 4 Rx drugs and hope to stop more soon. If you like your Dr, show him/her a menu plan. My Dr wasn't happy either, but now sees all the health benefits I've reaped from this diet. Low carb has done so much more for me than low fat ever did. Good luck to you.

      Most doctors are ignorant about keto. I beat type two diabetes and lost over 100 pounds, and found out along the way that high blood sugar was the cause of many other health issues I've beaten.

      @@ursulawilliams2371 Yes, meat and non-starchy veggies make up the majority of my diet, but you can have small amounts of berries. I haven't tracked my protein and fat, but have counted carbs and tried to keep under 20 gms (total not net) per day. I found that using keto sweeteners in keto desserts or using ready-made keto products sometimes slowed my progress. I do like chocolate and have found the 90% cacao Lindt bars quite good. I limit myself to a single square on occasion. If you test your blood sugar, I recommend testing after certain foods to see how you respond. I recently found that my sugar spikes after eating meats that had tapioca and/or potato starch in their seasonings. So I now avoid any prepared food with plant starches of any kind. It's better for me to buy raw meats and season myself at home.

    Nope. Just can't eat these. Spiralize my own noodles using zucchini and carrot. Spaghetti squash and cabbage are ok substitutes as well, plus probably have more nutrients than those noodles.

    Oki I try to understand this American Dr. I live in Sardinia. We are one of the longest live healthy people. We eat a ton of pasta. We do not eat meat. Some do only on holiday. I watch some of these videos and I just do not understand the advice. American say carbs are bad. Meat is good. So wrong!

      How do you stay so slim while eating all that pasta? You look great. Do you think all of the olive oil you people consume helps you stay slim? I've read where olive oil helps stabilize blood sugar.

      @@ChuckH-yf8ic I think you are right about that dairy. Today they inject the milk cows in the US with rbST which is a synthetic growth hormone that causes the cow to produce 25% more milk. When I was a kid, they didn't use this hormone in milk cows, and the majority of the people stayed slim. I think this hormone is getting into the milk and causing people to become fat. It might be in alot of the meat we eat too. Anyway, whatever you're doing is working, because you are a very beautiful woman. I need to marry a beautiful woman like you to cook me the meals to live a long life LOL. I have also heard that the Mediterranean people eat alot of balsalmic vinegar. Is this true? Vinegar is known to dissolve calcium from the arteries, and I wonder if this is another reason why you live so long?

      @@wayne12693 Here they say "cows don't drink milk so where do they get their calcium from?" Greens! Dairy is extremely bad for you which is why most of the world is lactose intolerant. No other animal continues to drink milk. Cows milk is meant for calves. Also the hormones in it is horrible. I never understood the American mindset with that.

      @@ChuckH-yf8ic You're right, a person can get calcium from things like spinach. I eat alot of cheese, but don't drink much milk anymore since the lactose is a sugar and I'm trying to lose 20 lbs/9kg. Alot of people are lactose intolerant, and like you said, it's probably because the cows milk was meant for calves. A man should be drinking the breast milk of a woman LOL Just kidding. A human baby should be drinking the mother's breast milk and not milk from a cow. The cheese has alot of B12 in it, which we need to stay healthy, and it won't spike the blood sugar like milk, so this is the reason I eat alot of cheese. I'm also addicted to it like a drug LOL. I also use full fat cream in my coffee since it has a low glycemic index too. That's the only problem I see with going entirely plant based, is the B12 thing. I used to know a guy that went total vegan for 20 years. He didn't eat any meat, eggs, or dairy the whole time, and got severely deficient in B12, which caused his methylmalonic acid to elevate and the high M acid dissolved the myelin sheaths from his nerves. He eventually lost all use of his left hand due to nerve damage. Anyone that is vegan should take B12 injections, because taking oral supplements won't absorb in a low acidic stomach. The vegan diet makes their stomach acid low. I eat some meat, but I also love vegetables and eat them daily. Do you believe that raw vegetables are better than cooked? I have heard that cooking destroys the vitamins and nutrients? Anyway, enough about food, I want to know more about you. I have seen pictures of your Island country and they are beautiful. Are Sardinians and Italians the same ethnicity? I could be wrong, but I think you Sardinians have your own language, even though you speak Italian?
