  • I grow a lot of beets each year, and I love pickled beets. In this video I show how I make a 1/2 gallon jar of beets with very little investment in time and effort.

Peeling causes them to bleed. Leave two inches of stem on and leave the end on. Wash, put largest on bottom of pot, boil till skin comes off easily, put in cold water. Stem and root rubs off, trim if needed.

Greg! The cutting process was a crime 😂 you must have a lot of beets to cut that much off! This is the first video I have seen! I am looking forward to seeing the gardening video! Good video- looks
    Simple

You don't need to cut the ends off, all the skin will slide off after boiling and you save the time you are cutting

An old guy he showed me you just need to wash and take the leaves off
    Then cook
This way the beet is all sealed you loose less color
But not only that after they are cooked they will peel still very easily including the top and bottom
Then if anything does stick its the bad spots that stick to the beet
You just trim it then but this only happens 1 out of 10 beets usually

@@maritimegardening4887 your welcome i used to peel them like carrots
And use the water to bring color black like you did
And my friend showed me cutting before cooking bleeds all the color out
No cuts color remains very bright even if you dont use the cooking water
Muscle memory stuff is great to do but doing it with others we can learn new tricks
Sometimes it works for ya sometime it doesn't lol
I don't like harvesting and canning it all at once
Sometimes it's not all ready at once so i do my canning in small batches too
      Gets done this way lol
Much love xoxox happy harvesting we have frost tomorrow night real bad tonight a touch so busy harvesting tenders have fun good luck

Stuck these in the buried brken freezers under an awning, six half gallon jars, pulled the last one out at beginning of spring, temp stayed perfect, we love your recipe, simple and delicious

Interesting. I roast my beets in the oven to concentrate the flavor and the skins slip right off when I rinse them after. My recipe for pickled beets is quite spicy with cinnamon sticks, allspice berries, mustard seed, white onion sliced thin, and all kinds of good stuff. My mouth is watering for them now. Thanks for showing your process. ~ Lisa

People who see me use a paring knife tend to freak out, thinking that I am going to cut myself. I'm with you on this one. Using it this way gives me control of the knife. I know exactly where the blade is and I never get cut. It scares me to try cutting away from myself. I feel like I have no control, especially with carrots, because there are bumps that grab the knife in weird ways.

Surely you don’t need to do the canning process if you have sterilised your jars and ring them poured boiling vinegar over the cooked beetroot beetroot the sealed.

Could one leave out the sugar? ( thinking of diabetics)

    • @maritimegardening4887
      @maritimegardening4887  Před 3 lety

Yes, just google "pickled beets with no sugar" and you'll find lots of recipes I would imagine. Of course, if you're not diabetic - it will probably taste better with the sugar.
