The sous vide step was enlightening. With cutlets that thick, it would take so long to cook without the sous vide that the panko would be overcooked. Just shows the level of knowledge and skill they have to produce a quality product, I'm adding this restaurant to my eating bucket list. 👍
Well old chap I would really worry about the pink / red colour of the meat - however I guessing they knew that the meat would continue to cook without heat for the next ten minutes. Shit - I hope so ! Apart from that I think I fell in love with the happiness and smiles. Definitely this is food cooked with love ….

These look soooo good. I have tried cooking them like this myself before, Sous vide first, then fresh bread crumbs, finally a quick flash fry, and they turned out awesome. I can only imagine how good these are tho!

they cook sous vide! and the chopsticks were designed to be easy to use, notice the notches to make sure food doesn't slide off easily. im def gonna come if i ever get the chance to do so

ここは間違いなく美味い。揚げ方に拘ってるから火を通し過ぎなんてことなくジューシーなトンカツを食べられる。だからカツカレーもカツサンドも美味い。
大分でトンカツ食べに連れて行くならここか、とん樹か不二かつ。
料理、雰囲気、接客全てのクオリティが高く日本を代表するお手本の様なお店だな

what is that yellowish sauce towards the end of the video? 11:17 clearly visible on top of a dish. never seen something like that in japanese cuisine.
It's a type of tartar sauce!
That is a Japanese-style Tartar Sauce which is derived from the French Ravigote Sauce. It is commonly served with a variety of foods - such as fish, poultry, and meat.
@@restaurantman is this similar to the remoulade sauce? I ask because it distinctly reminds me of remoulade sauce that I've seen elsewhere in northern europe for fish.
