    THANK YOU! THANK YOU! THANK YOU! I just made this tonight in my week old IP, but used the prepackaged spices with pouch. OMG! I can't believe how good this is. No parboiling either. I'm used to beef pho and 8 hr prep time. In fact I've never even tried chicken pho in the restaurant, I'm so hooked on the beef pho. I'm amazed and grateful!

      Slicefixer Padawan We are in Vancouver, Canada and lately it's been below 32°F and it isn't normally that cold here for such a long period of time. And I was in Dallas last week and there was one day when it snowed and with windchill, it was 7°F!!! What is up with that?!?!

    After I watched this, I made it. Now, when I have a yearning for Pho, I re-watch this and make it again. It is so delicious, especially with fresh cilantro and basil and mint from the garden. and beansprouts. YUMMY

    I tried making this and it was delightful. As served with beef Pho in restaurants, i thought i would add some hoisen and siracha and it brought it to another level. Delicious!

    I saw a hack on the Internet about keeping the pot warm by putting a see through shower cap with a hole in it to allow the passage of the wand. I am not sure it makes a big difference as you say. I finally had to get the sous vide from the Instant Pot. It's fun to play with. I can see it would be a good appliance for people who have digestive problems or chewing. I have a lap band and I can't eat chicken breast or pork tenderloin because it is too dry. Not fun throwing up!

    Hi Flo! I just made this last night and it was AMAZING. Do you know if I could make this with a rotisserie chicken carcass? I've made great plain stocks with them, and was thinking it could work here too? It would be so easy if so. Thoughts? Thanks for the awesome video! Your pho ga was the first thing I made in my ip!

      Sure! I don't see why not! The only thing would be, to make sure you had chicken on the side as I am assuming there's probably no meat left on the carcass. I'd also increase the cooking time to an hour to get as much flavour as possible. So glad you enjoyed it!

    I really enjoy all your recipe although I dont eat any of the food you cook! Anyways, I wanted to ask you Flo how you cleaned vegetables and fruits with a cloth I saw you do this in a video of yours but I wanted to ask, do you wash them with water afterwards, and what kind of cloth do you use?

      It’s the Veggie & Fruit cloth from Norwex. It’s a microfibre cloth with a scrubby side. It’s used damp. I wipe the veggie/fruit then give it a rinse. The scrubby side is great to scrub off skin from ginger, carrots and potatoes. You can buy it directly from me if you are in Canada at flolum.norwex.biz. Thanks!

    Hi Flo! Great recipe! I love Pho and am thrilled that it can be made so easily with the Instant Pot. I have my own recipe that I am working on at the moment which is coming along. Still needs a few more tweaks, but otherwise making great progress.
    A recommendation for a shortcut for the spices (especially if it is your first time making pho)... You can find the spices (star anise, cinnamon, corriander, etc.) already in a cheesecloth bag ready to toss in. Search for Gia Vi Nau Pho (Pho Hoa) on Amazon. Each box has 4 or 5 packets. I found this at my local Asian supermarket for $3 USD a box. As the spices are in a cheesecloth bag, the broth tends to stay a little clearer.

    Great tutorial, thanks! Wow that broth looks so good, and possibly worth the price of the Instant Pot alone. Having worked in a Vietnamese restaurant for a while, I know how long it usually takes to make broth, and have experienced old fashioned pressure cookers and stayed away. Going shopping on Monday :)

    Hi Flo! Recently I heard that any PHO dishes is based on the french dish "Pot-au-feu". It's due to the french colonial past in Indochina. Banh mi is also part of the same past. The sandwich is made with pain de mie, pâté, etc...I am glad you are better. BTW, I bought the kitchen Gizmo because the Joule was not available in Canada. What I would like is practical tips for using sous-vide. I use the Instant Pot insert. Should the insert top be wrapped in Saran Wrap to maintain the temperature or would the moisture be too much? Thanks for sharing!

      That makes so much sense, Joelle! Which is probably why it is pronounced the way it is. Thanks for letting me know. You don't need to saran wrap the pot. Your device should be able to maintain the temp on its own might just need to work harder. You can always keep the liner in the IP to keep it insulated.

      +A Murphy Thanks, Arlene! No, don't sub parsley for the cilantro. You can just omit it or use more green onions. My brother and his wife both don't like tomatoes, onions nor cilantro but they both love salsa. Goes to show that an ingredient on its own might not be good but when eaten all together, it's delicious. 😉 You can find rock sugar at the Asian markets. Otherwise you can sub in brown sugar. Hope that helps!

      A Murphy, i was like you: DESPISED cilantro. Couldn't even bear to walk past it in the produce section. Yuck. Then I read an overseas medical journal. Don't have the links, it was a while ago. Apparently, in approx 1995, researchers discovered something that shocked them. They were almost giddy. At the time, drugs to rid the body of deadly heavy metals that create heart disease and strokes, and are the harbinger of diseases like Alzheimer’s, Multiple Sclerosis, and Parkinson’s, were around $100-$200/pop. According to research completed in 1995, cilantro does the same or better job 5X more effectively and efficiently. And faster. No drug made by man matches it. Mexicans, who eat this stuff by the bushelful, do not get heart disease and strokes. It is de minimus within the Mexican population (NOT the American-Mexican population). Mexicans, unfortunately, get diabetes as a national sterotype. Anyway, I decided to hold my nose and give a cilantro a try--took me two years--and now I find I love the stuff.

      Depending on whether all the pieces are frozen together or not. But usually it wouldn’t matter as it would just take longer to come to pressure.

      Thanks, Emma! Only reason here was that I was using the chicken bones with not a whole lot of meat on them and for presentation sake. ;) I suggested using chicken legs and using the meat for the meal.

    Can you show me what the package of noodles looks like? We LOVE phó but we just got diagnosed as highly gluten sensitive and I don't know if the phó places have gluten. It sounds like the noodles are rice, right? I don't even know where to go to purchase the noodles.

      I actually tried it by boiling the bones in a pot first, then tossing the water and then follow your recipe. I was torn between your ingredients and my sister. I tried my sisters and I was missing something so it was bland. Next cold night, I'll try your broth. How long have you had your instant pot and which one do you have?

      When cooking the beef broth, you will also have to add meat to get more flavour. I have 2 x 6qts. DUO and Smart. Been using them for over 3 years.

    The chicken you put in the pot didn't have meat that you used in the soup? Is the clove, anise star and cinnamon stick over powering? I had Pho Ga before but a Seafood one and I didn't taste and of those spices. Thanks for the recipe.

      I happened to have some cooked chicken on the side and just used a carcass for the broth because that’s what I had. Pho Ga literally means chicken (Ga) soup (Pho) so I’m not sure the seafood one you had would be considered Pho Ga. I don’t find the spices overpowering and wouldn’t be able to make them out individually. They just work really well together. Hope that helps!

    This is the same recipe as Kenji's Serious Eats Pho Ga recipe.... I think you should credit him.

      +tomatojuice12 I learned how to cook this from various sources. If you look at any pho ga recipe you will find all the ingredients similar but of varying proportion. I took what I knew and I made my own recipe using similar techniques and a pressure cooker. If you are going to accuse someone, please get your facts straight.
