It's also one of the cheapest meals on the planet, even in restaurants. I used to get an enormous bowl (and it was only a medium!) for less than $5 in the U District in Seattle.
The bowl she uses would have been a large, for reference.

I forgot to mention that you can make the recipe without a pressure cooker, just simmer the broth on low for ~45 min. or until the chicken is just about to fall off the bone.

A big plus is you don't have today baby sit it, it will cook and then keep food warm for you.
Great for inexpensive food like dried beans and lentils.
Wonderful if you like wheat berries or barley that might take several hours on the stove top but are done in thirty minutes (pressure time).

Had my first pho bo and pho ga in Vietnam back in '71 and have loved it ever since. But only without cilantro, which to me is like eating Ivory soap. Parsley or Thai basil, yes - and always more fish sauce. YUUuuuum.
Everyone thinks Iâm crazy when I say that cilantro tastes like soap.
To me cilantro tastes like the old-fashioned Dawn dish soap, with a little added dirty dish water thrown in!

Yum!! When I eat chicken pho, I like to make a dipping sauce of sweet fish sauce+ginger for the chicken. That's what the Vietnamese restaurants give where I live, so now I do that for homemade chicken pho too!

Thatâs so nice of them! I personally think if they like chicken noodle soup pho is pretty close in concept with a little more of a fresher herby flavor from the cilantro and toppings that you add.
Pupps McGee awesome! A few hot pepper options on the side might be a good idea. A restaurant here gives us jalapeños instead of red death and itâs great! Even after the soup is cooked I like to mix everything up and let the additional spices âsteepâ before eating it. Sooo good
MC Sadly, my youngest daughter and I both donât like cilantro because it tastes like lemon soap to us. :( So I would just leave that out or put some on the side for my oldest and my sister.

Emmy, just wanted to let you know, this recipe is LIFE CHANGING. I live an hour away from the closest Vietnamese restaurant and pho bo recipes are scary and full of beef knuckles. I got the ingredients and made this yesterday and it is THE BEST THING EVER that I have made from an internet recipe. Thank you for posting this!

My pleasure! I would recommend getting a couple extra gaskets for your pressure cooker because after cooking pho it will continue to smell like pho and can impart the flavor onto things like beans. Good luck!

Emmy! I made this yesterday and it was delicious! I had most of the spices in powder form (didn't have cilantro or fennel sadly), and used chicken breast and left over rotisserie chicken bones. Absolutely yummy !!!!

Hello Emmy I would love love love to see your reaction to the inkigayo sandwich!! It is a Korean 3 layer sandwich that includes a slaw, potato/egg salad of sorts, and strawberry jam! It is exclusively sold at the SBS (Seoul Broadcasting System) cafeteria and apparently all the kpop stars are going crazy for it!!
I legit just saved a recipe someone did for it here on CZcams. It may not be the same but it's better than nothing for those of us living abroad and not being able to travel to Korea anytime soon.

I always squirt a little sriracha in my soup but I never stir it in so it stays kind of concentrated in one part of the bowl! My favorite part of pho is the way the flavor evolves as the Thai basil and cilantro and other additions sort of steep in the broth. So delicious!

My mom has an instant pot and has been debating making some pho, glad to hear it turns out yummy!
I always make my soup from scratch for four hours because I didn't think there was any other way to get the flavours to develop as much - very very happy to be corrected. Now I can make this for a weekend lunch or a weekday dinner instead of a special occasion! :D

If you ever want a fast way to strain the aromatics, cheesecloth or a large spice ball aka tea infuser works very well! It'll help produce a clearer broth too :)
