Pho noodles
Oxtail or any other beef bone 3lbs
2 gallons water
Yellow Rock sugar
6 oz ginger
2 medium onions

1 tsb teaspoon fennel seed

This looks fantastic. I made something similar recently, only used beef shank. I removed the meat after 3 hours, and returned the bones, and simmered them seven hours more! Yes, 12-hour broth. The marrow came out from the bones and made the broth amazingly rich. In addition to the anise and other spices, ginger, and onions, I also used lemongrass and garlic. SO GOOD. Removing scum diligently is key!!!

Making the broth on a LOW simmer with frequent skimming is a must to get that clear broth that defines a good pho.

I like to use a combination of beef shanks and oxtail, because I feel the bone marrow in the shanks adds more depth. I also like to roast off the shanks and oxtail to further add to the flavour. I don't like the idea of broiling the veges, it's better to have the fan on so you can get even amounts of browning without fear of burning one side to much. After 6 hours of gentle simmering I remove the spices and veges but I leave the bones in and simmer for a further 8 hours then I add a whole piece of brisket until cooked and then add beef tendons, tripe, beef balls in the last few minutes of cooking after having strained the bones out of course. Oh and if I'm extra bothered I'll put the broth on rapid boil and reduce it by a third to really concentrate all the beautiful flavours.

It's good for people who ain't got pho places nearby though :) I live in a small county in Texas and we have Japanese and Chinese markets but we have very limited "Asian cuisine resturants" we have sushi, Chinese(mainly American based) like panda or little Chinese resturants that serve normal typical things, and the chain of Tokyo Steakhouse, but that's it.🤔 so finding small things like this is heaven sent 🤗🤗

Useful tip: to skim the fat or oil off, you can just drag a piece of cling film over the surface. Just make sure you get the kind that can withstand that temperature.

I feel like I've been waiting for this video for years. Lol. I remember the first time I ate pho too! I was around 19/20 and a coworker took me to a pho restaurant in the Phoenix metro area. Hands down some of the best pho I've ever had. My life was forever changed. Now I live in Japan and have trouble finding authentic pho (though the Japanese twist is still quite delicious!). I've made it myself a couple times but haven't quite nailed the taste. Going to try your recipe next time!
What I like most about Mikey is, how he doesn't uses 'fancy' equipment and doesn't flash those insane chopping, cutting or tossing skills that other chefs seem to exhibit. Yet the end-result he achieves is mostly authentic (from what I read in the comments) and -- I'm sure -- delicious. What shines through, though is his pure and untainted love for food. Please keep making these recipe videos, Mikey. Love 'em.

Lol well fish sauce is rotten fish juice. They lay piles of (I forgot what fish.. sardine?) fish in open air for weeks and let it rot. And the juice that comes from it over time is strained and purified .. lol so the rot smell is actually legit.

I am officially a fan of Pho, my wife introduced it to me a couple days ago and I am hooked. The flavors are authentic and the crunch is out of this world, the noodles are perfect. Lastly the broth wooow! This dish is a real winner !!!!!!!!!!!

Mike well done buddy, awesome recipe it looks real authentic to me. All you need is a piece of cardamon, a couple of cloves, and a separate pot of water to speed up the process. Plus 8 hours on a low simmer wouldn't hurt.

For more umami flavor, use about 1 Table spoon of mushroom powder instead of so much fish sauce. Also, put the spice bag in the last hour so the spice wouldn't be all cooked off.

I've been making Pho every couple of days since Covid-19 lockdown and all my local Vietnamese restaurants closed. I've now emptied the shelves of fresh rice noodles at Hong Kong & Kam Man markets. Downing 15lbs of homemade Pho a week has been the only upside of this shitty situation.
As a Vietnamese, some small things about the recipe:
_ I know this is an American-Vietnamese recipe, not traditional. But for the love of god don't use Hoisin. Hoisin is 100% Chinese (or American-Chinese to be exact). There is nothing Vietnamese about it.
_ Correct spice blend for the spice bag is cinnamon, star anise, and cardamom. Don't use fennel and bay leaves, especially bay leaves, because it's not just non-Vietnamese, it isn't even an Asian spice.
_ Normally in Vietnam we don't boil fish sauce for too long, because it can make the broth sour. It you want to do it, it's fine, but make sure it's a gentle simmer and doesn't boil vigorously.
_ Your noodle-to-broth ratio is too much, which makes the broth bland; that's why you had to add a lot more fish sauce.
Also a way to skim off fat (although I suggest not doing that, a little animal fat is good for you): Put some ice on a ladle, and move the ladle across the surface of the broth. The fat will freeze at the bottom of the ladle.

You should try having pho with fresh pho noodles, which are thicker, there's a taste to them that can't be replicated by the instant noodles.

Not exactly..... The flatter kind is what they use in Vietnam throughout the country. It has nothing to do with whether you're from the north or the south. I say this being from the South.
