I too would like to see more ways you can use your harvest and preserve things. It’s helpful for all of us this time of year I think. I liked this as it gives me ideas on how to use my herbs before the deep freeze hits.
I throw my excess herbs in the blender with a tiny bit of water/oil just so it's liquid-ish and put it in ice cube trays. Quick and easy pre-portioned herbs that are nearly as good as fresh.
We love using our sage leaves for our brown butter gnocchi. And yes, we totally love sage chips as well! Love this episode😊

Yummm! Fried sage leaves! A two for one deal 😊
You can also use a double mesh strainer and cheesecloth to remove the tiny bits works great. You can also make ghee the same way just cooking a little longer so it's brownish and form a nutty smell.

Yes! More of these kind of videos too! Id love to know what i could do with extra tomatoes. Im so nervous about canning, but id love to know how or even ways to use your freezer well to preserve veggies/fruits. Or what you can hold off on processing until the winter time.

Wonderful! I have used an old Williams-Sonoma herbed butter recipe, but as you point out, that won’t keep a long time. I tried freezing it but it kills the flavor. This looks like my next afternoon project!

You should try this but instead of scooping out the milk solids you should make ghee. I’ve wanted to try ghee for awhile now so you’ve inspired me to try this with some of my herbs

I grew some sage from seed just because Luke said he thinks it smells so good. To me it smelled liike Vicks Vapo Rub...no thanks! 😃
Clarifying butter is not something I ever learned how to do. A clean canning jar might help too. They have markers on the sides for how many cups or ml you're measuring inside.
can this be canned and sealed? does it need a pressure cooker?

I'm guessing one can be lazy and just melt down some ghee?
It is easier to get rid of the moisture and solids by cooling the melted butter until it solidifies then wiping off the solids and moisture/whey with a clean cloth. You can then remelt the clarified butter fir the recipe.
What more do you want to know about clarifying butter? I learned my techniques from my Lebanese grandmother and mother because we made our own clarified butter and ghee for the Lebanese food we cooked.
