To loot back the gold that you gave to a trader. First give them a pack or pouch. Then whilst trading with them open it in their inventory. Move all of their gold into it. Now when you kill them, that pack or pouch is likely to be the most valuable item.

It is an exploit though, but you can justify it, I suppose :-)
If you're going to kill trader anyway might as well try and pickpocket everything you can :-))
