I love grilled cheese sandwiches, we called it toasted cheese growing up.. I make it with Vermont "seriously sharp cheddar" and butter (not margarine).
I also put dill pickle slices in between the cheese slices.

I do the same but I went from grilling to putting them in the oven under the broiler and toasting them. If you try it I suggest buttering the crust as well. Turns out fantastic!

Well this is something I already knew you could do. I’ve seen my grandmother do this before and was shocked that the sandwich tasted good with mayonnaise instead of butter. I love her cooking. I don’t use mayonnaise personally on anything though so I will probably never use this unless I end up with someone who does like it.
My mom used to put jam on the grilled cheese sandwich after it was cooked and I loved that. I still make them that way.

I've been doing this, they actually cook better and tend not to burn. The taste is also more flavorful and less salty. I highly recommend giving it a go.

The best is bacon drippings. If you strain it after frying bacon and place it in the refrigerator it's usually spreadable from the container. Be sure to use a lower temperature or it will burn. It gives the grilled cheese a great flavor.
I'll do you one better - use ranch. It's basically same as mayo once melted, but the added seasoning really takes a grilled cheese to the next level of flavor. I also dust the top with grated parmesan after cooking/before serving. That's the best grilled cheese imo

Use honey mustard it’s way better, it has the same effect but has a better flavor, and color. And use it with butter. So use butter and honey mustard on each side. Or you can make a custom butter honey mustard mix to put on. Or use butter on the outside and use honey mustard inside the sandwich which will make the cheese taste really good. My favorite is doing both.

My mom uses mayonnaise to make my daughter grilled cheese sandwiches. The last time I made one for her I used butter and toasted it in the oven using the broiler and my cast iron skillet to get it golden brown without being soggy. She said that Grandma’s grilled cheese is always too salty but she didn’t know why. She said mine wast the best she “ever had”. Take that into consideration next time you reach for that salty mayo.

I had never heard of butter on grilled cheese or grilled tuna and cheese until I enlisted in the U.S. Navy and watched the cooks buttering up the sandwiches. My dad always used Mayo when grilling, so took me awhile to become accustomed to the flavor. Today, I don't mind either way, but my preference is still Mayo. Incidentally, all this means nothing if you skimp on the cheese. 1 or 2 slices means you are wasting your time. Load that bad boy up, and mix the cheese slice varieties for a better tasting, oohie gooy tasty sandwich (don't forget your smooth, creamy tomato soup on the side!!!)

I like cayenne pepper - that definitely improves grilled cheese. I like butter better, too - patience and lower temp works best to get bread at right degree of brown and crusty and cheese melted - adding cheese to outside is also great.
There are very few places that a little cayenne is not a good addition! Dust it over your morning coffee and the bitter flavor is tamed. Not joking.

I thought the secret ingredient was caramelized diced onions. That’s what I put in the sandwich before I cook it. If you haven’t tried it yet then do so immediately.

I was introduced to mayo in a grilled cheese 30 years ago by my lovely step mother. Although she made it the same as a regular grilled cheese and added the mayo on the inside. So you didn't miss out on the outside butter!

Interestingly enough, I hate mayonnaise and I agree with this. My grandmother made me grilled cheese sandwiches for years and I loved them. Then she told me she made them with mayonnaise and I hated them lol. It really was better though. It’s almost like a sourdough grilled cheese sandwich.

Great technique for not burning the bread is a a very low temp. Apply butter on both sides of each piece of bread. If butter is hard, softer quickly in microwave. Make sure to apply evenly. Also put cheese on each piece of bread before putting it together. If you want a really good grilled cheese, try using brioche. Smashing it then using weight to brown it, is really the best way to get that nice color. Also when it’s almost ready, take some water in your hand and gently drop some around the sandwich. Then cover it. The water will also help with the melting of the cheese. You can also cut the sandwich in half before it’s done, then let the cheese melt back together. It sounds like a lot but it’s all quick. You’ll see the result in the end.

I put mayo on the outside, butter on the inside, and use shredded cheese because it makes it more stringy. It actually tastes really good, and you don’t need to put butter on the pan, as long as you understand your stove and can check it before flipping.
