I will try your recipe this time. For those who don't have coconut milk powder, I will be one of them, I will boil it to thicken it then pour into the chicken when cooled.
I did it today, luckily I keep your website and watch it and follow the way you wrap the chicken. My Pandan chicken is so yummy and aroma when deep frying. I deep fried 1/2 way then Air baked them to remove any access oil. Thank you for sharing you recipe and the way to wrap the chicken. Too bad I can share the photo of my Pandan Chicken here.

Do you have recipe for the sauce or dip to dip the pandan chicken?
Not a big fan of the dark sauce so I never added it :) Frankly Pandan chicken is great on its own, or with a chilli garlic sauce instead.
I do like a dark sauce with dumplings which includes light soy, black rice vinegar, ginger juliennes and a touch of dark sesame oil. Just add everything to a Bowl and then adjust. Add a spoon of each and test.
That chicken looks delicious! You know here in Vegas it is really hard to find things like fresh Pandan leaves or Kaffir lime leaves as well so many dishes have to be "McGiverd" You chicken looks really good!
+Richard Blaine Thanks so much! So how would you 'Macgyver' this one? Are there any leaves that are used commonly? I make another chicken dish using banana leaves. I have the same problem making some mexican dishes.. we get almost everything here in Singapore but it's seasonal.
If could not and I can't find fresh Pandan I would use frozen or fresh banana leaves from the Mexican market or even use a corn husk which might just taste really good! I could just use foil or even parchment! Many ways to Macgyver a dish and make it delish!
True the corn husk has that hay like aroma too..

where can I buy coriander roots
+Kim Touch In many supermarkets & asian groceries, when you buy fresh coriander/ cilantro, the roots are intact.. I cut them off and keep them for various Thai dishes. Most fresh/ wet markets will sell them this way too. I hv never seen just the root for sale.
The stamp in the passport n the map pictures is too much of a distraction. It's a good tehnique of wrapoing with a pandan leaves but please stop the pictures that keep running every now n then

Ouch! I cut my fingers folding the leaves. Warning people the edge of those pandan leaves are sharp.
Uh oh that never happened to me . Were the leaves washed? Shouldnt hv this problem if they are fresh and moist. Hope its not too bad 😌
Yup no worries nothing a band aid can't handle. The leaves were freshly cut from my garden and washed. I picked this dish because my garden were nearly overgrown with pandan leaves :p
Try putting them in the fridge for a few hours and washing before using next time:).. happy cooking!!
