    Could you help me understand the requirements of a commissary kitchen? How does this work with the cottage food law? I am a home baker looking to get a food trailer and I already operate under the cottage food law. In Alabama I'm able to sell anywhere from roadside to farmers markets. Why do I still need a commissary kitchen? I'm so confused. Also I will not be cooking or preparing food on the trailer so do I still need it to be fully equipped with commercial equipment?
