Btw...great video, very informative. I need to check with Harris County about setting up a stand.
I’m not too sure about Harris on setting up a stand there, but in Galveston, it’s super simple, but the health permits are only good for 2 weeks at a time, then you have to renew, but it’s all online, then the inspector comes out and makes their checks each renewal and you are good to go. It’s pretty painless. Stands are run on a whole different set of rules compared to a food truck, and they’re even different for a brick and mortar. Luckily there are really great people working in Galveston county that helped us starting out. I can’t say about about Harris County, it would be only hearsay and I’d hate to give you wrong information.

Very informative, thank you!! This is exactly what I need to do to have my cold brew set up, as far as the handwashing and dish cleaning station. How do you transport your grey water totes? Where do you dump all the water when the day is over? And how do you keep the dish washing station water clean throughout the day?

Great video and set up! I'm looking to do something similar and see lots of obstacles with that same set up for tarrant County in ft worth. I also been looking in Oklahoma. I keep getting told I can't set up a temporary bbq without it being a specific event that we would be cooking for Ex: 4th July celebration
The loophole is that you can create your own events. Most cities allow that. It’s how we would stay open. Every two weeks you just create a new event until you get to a spot in growth where you can do the 1 yr

Thanks for the info! We are still trying. The guy I'm talking to in Oklahoma said he had to get with legal because he's been doing this 31 years and has never permitted anything like this. I'm hoping to hear some good news soon.

Great job! It’s a lot of set up time. That is close to what I currently do but I am working to switch to a trailer with bbq porch. Have you adjusted your prices due to cost of meat going up? Just wondering what others are doing.
You always adjust for price or you’ll die. I cut deals for people left and right, but they have earned those deals, but I never undercut myself. We are switching to a trailer atm as well, we are building it ourselves, first part of the series will be out in a few more weeks. Definitely! That's one thing the Galveston County inspector was adamant about besides the sanitation/ hand washing station. Even though my pulled is the bomb, the only pork I do now are my ribs and jalapeno sausage, pulled just didn't go over well here down South where brisket is king. Even our loaded baked potatoes and sandwiches get a half pound of chopped fatty

I've been wondering about this but the only videos I could find were food trucks.
That was my situation too when I first started out. All the information I had to find out for myself. It was a long process, but luckily I had a supportive health inspector and health department that were able to help me along the way and get us up and running quickly through the confusing state regulations

What all permits would I need? And what about food preparation? I’m in Houston by the way.
You would need to check with the Harris County Health Department website, I don’t want to give you wrong information, every county is different. Make sure to look for the temporary permitting information.

How did you find the land for your stand? I am having difficulty finding a place to set up a road side stand. I am trying to least land....
It was a friends land. We have been looking for a new location and have had great success just talking with business owners and real estate companies. There’s lots of empty lots for sale, and you would be surprised how many owners will let you set up on them for a small price while they sell the land.
What size are you water bins the 3 different ones you have.
We just use 25 gallon totes we picked up from WalMart. The health department seems more concerned that we had the proper set up and bleach amount in the sterilisation bath than the actual size of the containers, but we went with something large enough to make cleaning easier for us. It’s hard to keep washing everything in small containers.
I see online that it says that I cannot prep the meat at home or roadside. What does that mean? I just buy the meat and put it on the grill? Can I season it is that prepping it I’m not sure.
For both Galveston and Brazoria counties everything has to be done on site, trimming, seasoning, and smoking. Sides have to be made on site, everything. What Harris County is probably talking about is using a commissary kitchen. That’s more for food trucks rather than bbq stands. There’s a big difference.
I was working at a place with a roadside bbq stand at lake Whitney yesterday they had the wheels off the BBQ pit an it setting on blocks I assumed so no one would steel it but maybe it was a health department thing
Yeah, funny how that works. You would think it would be the opposite, but Texas is serious about separating roadside BBQ from concession BBQ. Apparently there are a few sane minds in Austin that realize the roadside guys are a historical asset over the taco truck guys.
@@TexasBBQGuy I think it may be a money thing. I can bid a job anywhere in Texas an every dime of sales tax from that job goes to McLennan co. I wonder if wheels may mean taking money out of the county to them more than some historical nastallga
Pat's Texas Style maybe, but the way I read the law, a concession trailer has to be permitted and inspected by every county they operate in, and in Galveston County, that can take 4-6 months. Roadside BBQ stands operate under temporary permits, which only take 24-48 to process and get an inspection prior to opening.
@@TexasBBQGuy I'm more of a follow the money sceptical kind of person I've worked very closely with the food service industry for a long time I lease an maintain restraunt an beverage equipment I do not have to deal directly with them but I do catch a lot of hell indirectly from them I have also noticed that when the carnies show up for one of the local fairs they always get to open within a few hours with crap a local businesses could never get away with anyway it looks like you have a good relationship with yours it's important to keep that up
Pat's Texas Style I have strived to have a friendly and professional relationship with our county health officials. I try to meet, and in most cases exceed, their recommendations. The inspector that covers my area lives just a few blocks from my stand, so it’s a rather important relationship. But I can honestly say, the Galveston County health department have gone out of their way to help me get started, and the ongoing communications really shows that the officials care and support small businesses.
I know what you mean about carnies hahahahaha! Not just them, but the pop ups at Traders Village and the flea markets as well!
Alright, so this is the first video I have watched of yours, just got looking at all the comments, always fun. Funny I never see any spray bottles on Dashes cooks? 😄 I have to admit I was surprised there wasn't any Shiner Bock in the cooler? You SURE you're in Texas 😄😆🤣😂. Anyway, I do have a suggestion for you. Replace that hand spray gun with a small herbicide/pesticide type sprayer. You can find them at about one gallon or smaller and use only for your cooks. It works so much faster and with a more consistent spray. After all if you're looking you're not cooking. You can open a door, spray and close with very little time helping keep more heat in plus a lot easier on your hands. I have two. One just for straight water and another for my mixed water but one is fine. Anyway I'm going to watch you're first video on the smoker build. Have a great day. 😃👍🌤 Oh what the hell, here you go ⭐.
Can you put a flat top on the grill and do you need a extra permit
No extra permits needed, but if you are cooking in the open, it needs to be covered by a tent
No mention of Serv Safe certification. Not necessary in TX? Insurance or being a LLC is also a wise move .
This was a video on how to open a roadside BBQ stand in Texas, not how to run a business. Anyone considering opening a stand should do the back end work and research first as requirements from area to area and state to state differ. As I mentioned in the video, anyone considering opening a stand should contact their local health department for restrictions and guidelines.
But can you use the same cutting board for pork and bee?
Are you selling the beer, or giving it away? And what are the regs for that? Could you put only the pit on the trailer and then have everything else out, or is that a no-no as well?
Just a few questions what type of permit did you apply for? Is it legal to sell the beer and how much is the permit every two weeks?
Counties offer 2 week event permits ranging in price from $75-125, and you can’t sell beer without a beer & wine permit, which the counties offer, but it’s spendy. We found that beers offered for free drives traffic which you will more than recoup in sales revenue
Where do you store your meat when not bbq’n . I want to start a roadside stand like this in Florida but they say you need a commissary to store your meat. Trying to find a way around this
In Texas, for a roadside stand everything must be prepared onsite, so we now use refrigerators to store all our meats and sides ingredients. For a food truck they require a commissary kitchen as well. 2 different regulations here. I would look into a ghost kitchen as your commissary.

No. We did that for a while, and it was exhaustive, that’s why we built the trailer.

Some are to monitor internal temperatures of the pit and coolers, and some are to monitor the internal temperatures of the meats and sides.

My bbq is not smoked meat it’s South American style... Argentinean and Brazilian style. You’ve just inspired and motivated me. How would I go about getting a spot?

Andy Lara Talk to friends and family first, the great thing about a food stand is that if it’s good, they will come. Someone you may know may have an area you can get set up at, but learn from my mistake, get it under contract. Also a good idea is to talk to a local store or gas station. How is it cross-contamination to use the same knife on brisket and pork? I’ve been in food service for 50 years and have never heard that. Also, you need to label your spray bottles.

Howdy strange. Wow how time flies. It's been another year since I came across this video and said hello. Well I've had to "retire " from trucking. Diabetes finally caught up with me and I've been in the hospital 4 times this year going back to February. I've lost most of my right foot. Question on the beer do you sale the beer
No, we give a free beer with the order to folks 21 and over, and free water and sofas to kids, it’s all figured in to the price of the orders

In Texas, you don’t need a permit if you are giving out free beer, you just can’t advertise it or it’s a hefty fine.

Do you weigh your sandwich meat or use a scoops
We weigh slices then chop for the sandwiches, that way we can provide the cuts the customers prefer. Some people like lean, some like fatty chop, so it provides a better experience for the customer.
Sooo, it's yet another year latter. How you doing? And I'm STILL working on putting up my first content on CZcams. I had to take a 3 month medical leave( basically th3 entire summer) due to not taking care of my diabetes, my bad. Anyway I did catch something this time I haven't caught before. Dash's favorite wood is "Free" wood. Just like his favorite briquettes are the cheapest ones hee can find 😂🤣😅😆😁🔥. Anyway spring salmon season will begin to get started in about a month. How many briskets do u sell at this location in a weekend?
When we were at this location, about 5 cases a day, not including all the ribs, sausage, and potatos. It took a few months to get up to that volume. We’ve just opened a new location and we are quickly ramping up as word gets out.

We’ve only got some fatty and chopped sandwiches left today, tomorrow we’ll have Prime brisket, baby backs, jalapeño sausage, and the sides will be potato salad, smoked mac & cheese, or bbq beans. A plate with 2 sides is 10 bucks.
That's not cross contamination. Cross contamination is putting vegetables or other foods on the same surface where raw meat was. Like cutting vegetables on the same cutting board where you just handled raw chicken. You can't get salmonella or ecoli from using the same knife to cut cooked meats. That's why you cook it to a safe temp.
I know that. The health department seems to think otherwise though. Whatever makes them happy and provides less hassles with local government the better.

We shut down for the weekend expecting a deluge, but all we got was a few sprinkles, but it gave me time to smoke a brisket at the house and work out some next level tweaks on flavor and tenderness. My neighbors are loving me lol!

We do not sell alcohol, you need a license for that, but we were giving a free beer to our adult customers with their orders. It was a huge hit! Our new place in Pearland we are setting up a dining area, but it will be byob with beer available for purchase next door.
