How to cook waakye like your favorite street waakye

  • Without saying too much, let me say this very simple waakye recipe will make feel like you're eating your favorite roadside waakye. Please look out for the stew recipe.
    Ingredients:
    2 cups rice
    1 lb (2 cups) black eyed peas
    3-4 full length sorghum leaves aka waakye leaves or about 7 cut ones
    1 teaspoon baking soda /bicarbonate of soda
    1 teaspoon salt or to your taste.
    7 cups water

    I'm Nigerian but I must say that waakye with all the sides; (spaghetti, garri, leaves, plantain, and waakye stew with boiled eggs, and shitto) is hands down my favourite Ghanaian street food. The deliciousness is out of this world. This recipe is 👌👌👌.

    I tried this recipe in addition to the stew and it turned out perfectly! It was my first time making waakye and my husband enjoyed it so much.     The type of pot you cook the waakye in makes a big difference. Daadesan pot is the best. Again soak the leaves for at least 6 hours with half the quantity of baking soda. Do not not soak the beans, it loses taste. Watching you I am salivating. Well done.

    My darlings do use a clean tea towel or cotton napkin to cover the pot rather than tin foil...its healthier but the waakye looks so delicious, will definitely try it...well done👍😍😘😘

      Baking soda shortens the cooking time of the beans. It has been known to cause an upset stomach for some. You can absolutely omit it from your cooking.

    Sister, so the sole purpose of sorghum leaves is to add flavour or just colour? Sorghum in our country has green leaves not this kind.

      Sis mostly adds colour. These are the dried leaves. They are green when fresh.

      It dakens the colour. Without it, te waakye color will be more of bright wine
