    I smoked up a whole packer brisket, using their pecan wood splits. I set my smoker to 275 degrees, I smoked the brisket until it reached 165 internal temperature, then I wrapped it in foil and removed it until 200 degrees internal temperature. I rested the brisket in my cooler with a towel wrapped around it, with the foil still on the brisket. After 2 hours of resting I sliced it up. Brisket came out incredible, the delicious Smokey taste from the pecan complimented the brisket really well. I seasoned the brisket with just salt and black pepper.

    To keep your ends from being that dry. Wrap the end in aluminum foil or paper after 3 hours. Works like a charm everytime

      Just a Cooler. No ICE. Just to let the meat settle and still cook it's self. The Insulation will help render the juices.

      Find a local good reviewed whole in the wall type of bbq restaurant nd you can have all the brisket you want. Or learn how to cook it. I say try both
