💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. Kiaora Hercules candy from new Zealand, that white sugary substance you put on the candy when it's poured on to the table, is that the sour ingredient?
It is probably either citric acid or a blend of citric and malic acids. I've used both while making wine to balance out the sugar. They both react differently in your mouth to the tastebuds. I use a fraction per batch lol.
But ive used the citric acid when I made lemon drops at home. Adding a bit to the raspberry and strawberry flavoring really helps boost flavors.

A commenter once said if they used the citric acid too early, it could burn.
Which makes sense to me.
Carboxylic acids like citric acid and malic acid decompose into carbon dioxide above about 175C/350F so have to be added after cooling.
It also gets mixed in just fine by all of the handling.
@@roberthindle5146This doesn't get above 310 though. I found in my own candy making it can be bitter above 280. I don't add it until 260 just to be sure.

The vibration of hitting the hook with the hammer helps release the candy if it sticks. I had the same question when I first started watching!

Curious here…. Why don’t you add the sour component into the brass pot and mix it in before you dump out the mixture onto the cooling table?
Citric and malic acids break down at high temperatures. You have to let the candy cook a bit before you add it if you want the acid to retain maximum tartness.
