  • For thousands of years Amaranth Leaves have been considered a sacred leafy green that is incredible and nutritionally dense. Is that true today? Are there any side effects that you should know about? What is the best way to prepare this green and how does it taste?

Thank you so much for this video! I grew an Amaranth plant this year for the first time. Now I know how to prepare it. 😊

As mentioned at the end of the video: Fairly high in oxalates FYI. Not at bad as spinach and there is some calcium, which can help block absorption of oxalates. Still not at good as collards (which has more calcium and less oxalates). If you get kidney stones, be mindful.

Thanks for the tip about Google Scholar. I’m going to check out your video on purslane. it’s growing in my garden as well as the toxic spurge.

Thanks for the tip about Google Scholar. Never knew that.
Also, have you ever cooked with purslane? I have it growing in my garden and have heard it’s edible and nutritious. I also have the toxic spurge growing so I know the difference.
    Thanks in advance.

How about some recipes for sorrel ξινήθρα (xínithra). I just know the soup and mum would make pita or is that it or sorrel.
